Feta, tomato and bean stir-fry - Ready in 10 minutes!

A very surprising taste.

150 g green beans, trimmed
20 g pine nuts
1 tablespoon olive oil
1 garlic clove, finely chopped
1 tablespoon lemon juice
1 heaped teaspoon Dijon mustard
6 cherry tomatoes, halved
4 sun-dried tomatoes in oil, drained and finely sliced
30 black olives, pitted
200 g red kidney beans, drained, rinsed
1 tablespoon balsamic vinegar
2 large sprigs fresh thyme, finely chopped
freshly ground black pepper
100 g feta cheese, cubed
basil leaves, to garnish

Simmer the green beans in water for one minute, drain et set aside.

Heat a wok or frying pan (wok is ideal), add the green beans and garlic and cook gently for 1-2 minutes. Add the lemon juice and mustard, stirring to coat the beans. Mix in all the tomatoes and stir until juice begins to run. Add the olives, red kidney beans, vinegar, thyme and black pepper. When it is hot stir in the pine nuts and cheese. Serve garnished with basil leaves.

Unfortunately I don't know how much fat, salt and carbs. Was 6.1 mmol/L (108 mg/dL) after this meal. The family enjoyed it too, which was a bonus.

I have read some interesting things about green beans: how they have an "insulin-like effect." I have even tried the green bean juice from a juicer. I remember that I didn't find it too easy to swallow, but I noticed that it really dropped my blood sugar appreciably. However, my favorite recipe is the stir-fry green beans with carrots (http://www.anti-diabetes-diet-supplements.com/green-bean-recipes.html), since I get all the fiber content this way.

wow i didn't know that about green beans.i'll have to add more green beans to my diet.that recipe sounds yummy also

Nice recipe. Some estimates on the nutrition content for the whole batch :

150g Green beans, about 11g carbs
20g pine nuts about 3g carb, 10g fats
6 cherry tomatoes, 5-6g carbs
4 sundried tomatoes, 5g carbs
30 black olives, 10-15g carbs, same fats
100g feta cheese, 4g cabs, 32g fats
200g of red beans, about 49g carbs

Might be off a little, but probably close.
