The tomatoes in our garden are getting ripe....and I love them. We bring them in, and I stand over the sink and eat one. I want more, but don't know how that will work. One huge tomato for breakfast (nothing else) doesn't seem to hurt, but I have been running low because of the heat. Any other home gardeners, and how do you handle eating the tomatoes?

eat themwith salt/pepper/mayo on a nice whole grain bread! yum. i love tomato sandwhiches.
Splenda covered/saturated tomatoes....yuuuuuuummmmmeeeeee

Straight up, or with a sandwich or salad. Tomatoes are easy to bolus for and they are fairly low carb.

Ok, but how many can you eat before they mess up the BS? :eating: I love them with just a bit of salt, and we have loads of them.....can I eat several a day. Didn't I read that tomatoes lower BS? :tomato: Is that just wishful thinking?:frown:

A few times for breakfest I've eaten a tomato and scoop of cottage cheese. My blood sugar was great afterwards. I would have thought tomatos would be raise the bg?

Found this in a quick google of Tomatoes and Diabetes. Think I will have two for breakfast tomorrow.
"Raw and processed tomato products are excellent sources of dietary lycopene. Lycopene has been associated with a decreased risk in cancer and cardiovascular disease. The antioxidant properties of lycopene are thought to be primarily responsible for these beneficial effects (3,4). Recent evidence suggests that glucose-intolerant states are a result of increased oxidative stress, and that lycopene may play a role in reducing the pathogenesis of diabetes through its antioxidant capacity (5). However, this hypothesis needs to be clinically examined."
At about 5 grams of carb per medium tomato, I only bolus if I eat two. And sometimes I do. :)

you'll only have "good" maters for a little while during the summer. Relax and enjoy them. Remember, everything in moderation.

Those they sell in the local stores are the ones they strip mine down in Texas. I like tomatos, but they give me such heartburn I've had to stop eating them. Even though I've been taking Nexium every day for the last six months, I still get it most every day.

Mmmm i love cherry tomato's... i like to snack on them!! straight from the fridge so they're nice and crunchy :D

Nothing that tastes that good can be bad!! I love them straight from the garden, but a good second is straight from the fridge.

Hi Sydneya, how's the new grandbaby doing? I ate two pretty big ones this morning, and they didn't raise my BS anymore than my regular breakfast.
