One of my favorite low-carb snacks is beef jerky. It's really hard to buy good jerky and I took to making my own awhile back. Today I Picked up 4 London Broil steaks on sale. I found some apple chips for the smoker also, which was a nice find for Albertsons. Got the jerky marinating in soy sauce, worcestershire sauce and maple syrup. Time now to make a batch of my jerky rub and fire up the smoker. I like it hot. :evil:

I love jerky. I am very fotunate to live near some great smoke houses. They sell all sorts of jerky from turkey to classic beef. Making your own is a money saver too I'll bet!
Ha. I just bought some jerky today to gnaw on while I paint my den. I hate painting, but love jerky. :biggrin:

Got it all in by 10 pm. Got the wireless digital thermometer hooked up. I try to keep the temp about 110 degrees. Past experience says it will take between 12 and 18 hours. The trick is to not "cook" it. It's a lot of work, but it lasts a long time and you can't beat it.

At the 12 hour mark now. The thinner pieces are starting to get close to finished. For the next few hours I get to taste test them as I pull pieces out of the smoker. :star:

I love making my own jerky, have you tried using a dehydrator?? (sp?) it comes out pretty good, but you really dont get that spoky flavor, I make up for that using liquid smoke in the maranade, I usually make a batch every couple weeks, and it takes anywhere from 6 to 10 hours to make..

Have any of you tried deer jerky?? Oh man, talk about heavenly. I love deer season every year cause I know we will have jerky. YUMM YUMM !!!!!!!!!!!!

Nah, most of the time, hubby goes after his daddy or granddaddy. Deer meat is actually good. Guess I'll be hated now for saying that.

Deer meat...yick! When we go "back home" to North Dakota for family reunions, my dad and his brothers and the various cousins go deer hunting. One year, they cooked up some of the deer without my knowing what they were cooking (I had been out with various other cousins)... so my mom gives me a plate and I start eating. One bite, I knew it wasn't beef!!! Man that **** tasted like kitty litter sand! Ewwwwwww!
Of course, it could have just been cooked badly, but :dontknow: cuz I won't ever try it again! :rofl:

My buddy at work has the same smoker as me and we both share tips. He is buying a dehydrator and is going to try a combination of both. He is going to use the dehyrator nearly till completion, then put the jerky in the smoker for a blast of smoke. Depending on how well it works, I may get one myself...

the best one I found was at wal-mart, it has a fan on top, and is a bit more powerfull, it can make 10 trays of jerkey in about 6 to 8 hours..... :thumbsup:

My hubby uses a dehydrator that we bought at WalMart (not sure if it's the same one Paul mentioned). It works great making jerky and dehydrating fruit.

4 lbs of meat (thin cut)
20 oz of Kikkoman Soy Sauce
5 oz of liquid smoke.
4 oz of Worcestershire sauce
2 Tablespoons of Brown sugar
2 Tablespoons of Onion Powder
2 Tablespoons of Garlic Powder
1/2 a tub .75 oz of S&B wasabi. To make it hot use the whole tub.
Mix all ingredients and then place meat in to liquid in a container that you can lay the meat out flat in and let it soak for 24 hours or more.

Do you smoke it or dehydrate it? Never tried wasabi for jerky. Everything else is pretty much what I put in my marinade. The difference for me is that I pat dry (drip dry) the pieces and top with homemade rub before smoking.

I dehydrate it. I also move them around through out the drying process. So the top rack will be on the bottom when I'm done.

I helped create this last batch, & skipped both the liquid smoke & worcestershire sauce (on my portion, only). I did however, use the brown sugar, onion powder, garlic powder (1/2 the amount suggested, though) & soy sauce. The marinade tasted great & hot....:D :- Can't wait to try it when done!
