Ampalaya con Carne


You will need:

2-4 medium sized ampalayas (bitter melon)
4 cloves crushed garlic
2 tbsp. chopped onion
6 ginger cloves, sliced
½ kilo Beef, cut into 1 x ½ inch strips
¼ cup water
3 tbsp. corn starch
2 tbsp. sesame oil
½ soy sauce
olive oil


Directions:

1. Mix corn starch, sesame oil, soy sauce and 3 crushed garlic cloves. Marinate beef strips in mixture for 20 minutes.

2. Slice ampalaya lengthwise to discard the seeds with a spoon, then cut into strips.

3. In a separate pan, heat olive oil and cook the beef. Set aside its marinade for later use.

4. When already cooked, remove beef from the pan then sauté garlic, 2 ginger slices and onion till slightly brown.

5. Add the ampalaya slices, the beef with its marinade and soy sauce, and simmer for 3 to 5 minutes. Best served hot with rice.


Just try this guys you might be surprised.

hi, bsr2002. Yes, I am. I just recently developed the liking for that vegetable. Before I could not stand its bitter taste (thus the subject title =) ) but when you clean and wash it properly it tastes okay. I was happy with how it came out.

Have you any recipe to share? I am trying to learn to cook as I just recently tied the knot. I like collecting recipes that is why I posted here for my first post. My mother is diabetic and she will be coming over to our house to visit us about a month from now and I like to surprise her by cooking for her. Any quick dish and some more recipe =) will be appreciated.
