2 cups chicken broth
1 onion, diced
2 tablespoons olive oil
1 tablespoon cumin seed
1 tablespoon mustard seed
1 tablespoon crushed red pepper (pizza pepper)
1 tablespoon oregano
1 1/2 cup water
1/2 cup barley (pearled or rolled)
1 cup red lentils
1/2 sweet red pepper, chopped
salsa
1 can corn kernels (niblets) or hominy, drained & triple rinsed
1 can kidney beans, drained & triple rinsed
1 can tomato w/green chili (Ro-tel, etc...)
1 tsp. chili powder
4 cloves. garlic - minced
tomato slices

Heat olive oil in large pot, add onion and red bell pepper. Saute' over medium heat for 4 minutes, add cumin seed, mustard seed, garlic. Stir for 1 minute, remove a bit of onion/pepper mixture and reserve, then add barley and lentils, stir well to coat w/oil. Add chicken broth and water, bring to a boil, lower heat and cook for 5 minutes. Add the remaining ingredients, except tomato slices and salsa, and bring back to a boil. Simmer for 30 minutes. Serve with tomato slices and salsa. I usually make an omelette and add the reserved red bell pepper and onions.
