I heard Rhubarb was low in carbohydrates and would like to make a pie filling with it. Any ideas on how to prepare this stuff without the starches and sugars?

Use Splenda instead of sugar. There's a Splenda Blend for baking that's half sugar, half Splenda so be careful what bag you pick up in the supermarket. The Blend has more bulk, but is still half sugar. Look for a recipe for a low carb pie crust. I know I've seen them, using soy flour & crushed nuts and only a little regular flour. You'll drop the carbs but raise the fat content.
