Is it possible to make a low carb or medium carb lasagna from scratch? Seems like the tomatoes and the noodles would have most of the carbs. I've got an awesome recipe, but have never seen those ingredients in lower carb forms.

Not sure if Dreamfields makes lasgna noodles, but if they do, you are 1/2 way home.

Dreamfields seems to be the only one that makes low-carb lasagna noodles. They claim only 5g carbs per serving. Wonder how big the serving size is?
But what are "protected carbs" (http://www17.netrition.com/dreamfields_pasta_page.html)?

You didn't read the asterisk item??
* Carbohydrates that are "protected" from digestion in small intestine.

If it's fiber, then they need to say fiber. If not, then I'm in doubt...
I cheat. I make lasagne by using sliced summer squash or zuccini instead of noodles. Everything else is the same. MMMMMMmmmm! Mich

Knowin me.. Ill add everything and No pasta. Throw in the sauce, ground beef, & all the cheeses... pretty low carb. J

I think I'm just gonna go for this weekend and make some. It's probably been 5 years. I think I'll look for lower carb sauce, but regular noodles since I handle pasta pretty well. With my magic potion, Symlin, it helps for those extra carbs...
Consistancy on the squash lasagne is slightly different. Best let it sit for a few minutes out of the oven. Taste is great because yep...I do add all the cottage or ricotta cheese, mozarella, parmesan, eggs, etc.
It allows me to eat some whole wheat garlic toast with it and still stay under my limit.
My family loves this stuff. Poor little KOD (Kids of Diabetics) didn't even know what "normal" food was. Now they both make it for their families. I guess it's all in what you're used to. Mich

I want to make Lasagna with the Dreamfields. I haven't had it in several years. Yep, use both fat free cottage cheese and will look for the reduced fat ricotta (not sure if they make it). Thanks for the idea.

I have to say that the dreamfields lasagna noodles are really good.
Serving size is really nice too.
The way I have it a 2x2 block is about 12c total.

Awhile ago I made lasagna using sliced eggplant instead of noodles - same concept as using summer squash. I used cottage cheese instead of ricotta, and reduced fat mozzarella. Would have used fat free but couldn't find it. I also had spinach in there.
I had a piece for dinner tonight, taken from the freezer. It's definitely not the same as lasagna made with real pasta but you do get the flavors and it's very satisfying, not to mention much lower in calories as well as carbs.
You could always mix the two, using half noodles and half squash or eggplant.
