Hi All:
I saw this on the food channel (my addiction). It's quick, easy and good.
1 cup peanut butter (creamy or crunchy)
1 cup splenda
1 tbsp vanilla extract
1 egg
mix together, roll 1 tsp full into a ball and place on ungreased cookie sheet. Press with a fork dipped in hot water and then into splenda and then onto top of cookie (just like making regular peanut butter cookies). Bake at 350 for 10 minutes. This makes 8-10 cookies, depending on size.
These are great for times when you need something sweet.

did anyone figure carbs yet in those peanut butter cookies?? Guess I am lazy, but didn't want to see how many tablespoons of peanut butter is in a cup. I love peanut butter cookies and plan on trying them. Came back tonight to see if anyone figured it, don't see anything.

Must be big cookies. I dropped them by a flowing over t-spoon and got 16 cookies--small, but sort of normal size. We tried to figure and also got about 4-5 per cookie. Don't know if we figured right though so I would go with the other count.

Hi Everyone:
Glad to see my cookie recipe was a success. I guess we like BIG cookies in TN, as I only get 8-10 out of each batch.
What I like best about them is that they don't seem to affect my blood sugar (i've had 2 at a time). My husband who is not a diabetic likes them as well. They are a little more crumbly than "regular" cookies (but, if they break, the calories leak out!)

My grandson thought he was eating a mouthful of crumbles but was kind about it. Then, just before Christmas I came across another version which is almost the same but only has 1 teaspoon of vanilla in it.
The biggest change was to add one teaspoon of BAKING SODA to the recipe and they stay together better and then everyone was pleased. Much better!! Roll into walnut size balls and flatten with a spoon. Yummy!
Now the carb counters in my family always request these. No, they are not diabetics....just being careful!

There is absolutely no way a recipe containing 1 cup of peanut butter only has 134 calories from fat!! The majority of calories in these would be from fat.

O.K. so I've had this recipe at home for some time, and I finally made it on the weekend. Take a look at the pic...
GREAT Cookies...only 5.5 carbs each by my ingredients....
