Hey Retts,
I'd be interested to know some people's ideas on this. Since my D-day I've pretty much resigned myself to no dessert. The only carb-free thing I've made is sugar-free Jell-O. Not that much different than how I remember regular Jell-O.

i do things a touch different than most people. i refuse to change my eating habits
i just count the carbs and take my meds for that amount. i always buy them for easier carb counting
there's many low carb cookies out there and they do taste good. i can usually eat 3-4 cookies that would equal a small sandwich, but potato chips i find hard to get accurate numbers with, so i have to avoid them most of the time--- but not always.

I buy Edy's Slow-Churned ice cream. I think I buy the low-fat, low-sugar. It's pretty good. I subtract 1/2 the sugar alcohols and it's about 11 carbs per serving.
But I also don't deprive myself of desserts :) I just bolus for them and eat them! It is harder when there is no packaging and carb count, but you'll get good at guestimating... Just give it time and practice.

I also don't deny myself desserts. I just eat in moderation and take my insulin according to what I am going to have.

Ditto ... insulin was created for a reason :D I try to balance desserts with a really low carb meal though, so I'm not overdoing it. Doesn't always work that way but it's good to try, coz I feel crappy when I overdo my carbs.
If I'm really being good then I'm selective with what sweet treats I'll eat - there are plenty of lower carb options if you think outside the square. Other times I'll just dig in and not care! The only problem there is the potential roller coaster highs & lows, so just be wary and have your meter on hand.

Look under the recipes thread, I posted a great s/f peanut butter cookie, easy to make, low carb, tastes great! You can also make a sugar free cheese cake, using your regular recipe and substituting Splenda for sugar.
