No carbs in sugar free Jello so have all you want. I find that I can eat all the BBQ Pork Rinds that I want without any BG rise.

yes sugar free jello is a free item... you can roll in it if you want too lol

plus any veggie that is green as long as its raw, if its cooked you need to limit it.

You want to go by.... if its less than 20 calories and less than 5 carbs per serving, its free, eat away

all the diet pop or water you want.

here is a website guide
Diabetic Free Food List (http://www.fitnessandfreebies.com/fitness/freefoodlist.html)

however there are some foods on the free foods list that have a measurement. If there is a measurement, that means your limited to that measurement 3 times a day, and they dont need to be all together. Such as 1 TBSP of ketchup. If you eat the 1, you dont have to count it. If you eat 3TBSP then you need to count it.

I've found that I can eat nuts, pickles, pork rinds, s/f jello and most cheeses without a rise in blood sugar (though cheese may affect some). However, just because it has no effect on blood sugar does not mean it is fat or sodium free....if you have blood pressure issues, might want to watch some of these things for their sodium content. Moderation is key.

Watch out for the side affects of things with sweetners replacing sugar!.. you may end up in the bathroom all evening. :T

Salads, for me strawberries but not for everyone, mushrooms, green beans, leeks, MEAT, fish, cheese... eggs if your cholesterols in order.

as a student i lived of most of this, and just added something carby to keep me going.

Oh and coffee :D

But be careful coz everyone is different. But makes me go high for some they don't. some people go high from mellon, but i don't. So just test things.

According to Dr. B putting any solids in your stomach will cause your bgl to rise a bit (aka the chinese resteraunt effect[CRE]). I don't think this would occur with jello however.

The reason the CRE happens in healthy individuals makes sense. There is food coming in, the body gets ready to go by letting some stored sugar go which gets the insulin pumps (beta cells) going and ready to metabolize whatever is comimg in. Remember in the end sugar (glucose -> ATP) drives all cellular processes.

That being said; While the CRE makes sense I have not seen any data that it actually exists.

Not true. Peas are high in carbohydrate.

Peas aren't vegetables, they are legumes, which have carbs.

If you don't mind eating extract of collagen from cows, horses and pigs, knock yourself out. There's no carbs, so you BG should not be affected.

What makes me think that the Chinese Restaurant Effect has substance is the fact that a very low carb meal (eggs, cheese and musrooms) causes an almost immediate increase in my BG. It happens too quickly to be caused by the protein. So what else could be doing it?

As you know, I always bolus for protein. In fact, I take 30% of the equivalent carbs up front as an immediate bolus.

I also would like to get to the bottom of this one. Brian gives the impression he is willing to try to test the theory. The question is, what do we use to test it? Would simply drinking a gallon of water do it? What food is truly carb free that someone could eat enough of to distend the stomach?

Does your blood sugar rise if you don't eat breakfast? Mine does.

I don't know if water would achieve the Chinese Restaurant effect. Something high in fibre would probably be better for distending the stomach. How about a head of lettuce. According to nutriondata.com, a butterhead lettuce contains only 4 grams of carb, 2 of which is fibre. So the carb driven effect on BG should be minimal. It will be important to ensure that your BG is stable and not moving up or down at the time of the test. Which is why I am not volunteeriong to do it. My BG is on the move most of the time. :o

Brian, To test CRE.
I suspect it would be better if you go to all-you-can-eat chinese restaurant. just kidding.

I eat almonds, cheese, cucumbers, diet sodas, but also in moderation, and as Linda said, pork rines.

Since being diagnosed with diabetes, I've been going through raw snow pea pods like crazy - I have to buy more of them at least once or twice a week. Near as I can figure, they're 2g carbs per ounce, half of which is fiber. Tasty and sufficiently low-carb that I can just grab a few to munch on when I walk past the fridge without worrying about having to bolus for them.

I've also peeled other types of peas out of the pod with my teeth when I was a kid, but now I tend to just eat them whole, package and all.
