I was wondering if anyone has had a headache after using splenda. I have this peanut butter recipe that calls for 4 ingredients 1 cup peanut butter, 1 cup splenda , one egg and 1 tsp vanilla. As you stir this mixture it will become firmer and then you can form 1 inch balls and put a fork print on the top and bake at 350 for 10 minutes. Their only 1 1/2 carb for each cookie. I know their small cookies and you can make 22 of them per batch. Well today I made them and they were wonderful tasting but about 20 minutes or so I started to get this headache and I was wondering if it was from the splenda that I used in the recipe. Going to eat another one of the cookies tomorrow and see what happens.

I have never had any headaches with Splenda, but a few years ago, before diabetes, I used to use Equal in my coffee and tea and I got sick as a dog. My husband and I were sick for a good many months, headaches, and nausea and many other things, sinus problems, shortness of breath at times, it was horrible. It got so bad that we were in and out of Dr for months and no one knew what was going on.

Months later, we just happened upon a Dr in another state that mentioned Aspartame, they had no tests to find out if we had allergies to this, but the symptoms we had were what others were having that had been on this for a long time. Turned out we were deathly allergic to aspartame. We immediately stopped taking it and it took like 3 months to start feeling better from it.

I guess anyone can be allergic to anything, but ours just happened to be aspartame. So when I found out I had diabetes, it has been quite the challenge for me, not only can I not have sugar, but I have to really really watch for Aspartame in my food/drinks too.

But we had massive headaches, mine were worse than his, but it was bad. So you might have some sort of a reaction to it, I had a friend once that couldn't use Splenda, she got really bad headaches from it. My oldest daughter is allergic to peanuts and if she gets anything with peanuts in it she gets a bad headache and a rash. Could it be the peanut butter in them?

1 cup of splenda sounds like a lot.

1 cup of splenda sounds like a lot.

They have bags of splenda now that measure like normal sugar, cup for cup. So it is great to bake/cook with. ;)

Their two different kinds of baking spenda . One has more actual sugar in it. Of course I made that recipe both ways and it tastes much better with the one that has sugar in it.
