Here's the situation:

I have been eating a ham sandwich for lunch for several years now, and injecting 2 units to cover it---all was fine.


For the last 5 weeks, however, 2 units for my ham sandwich and I've also started eating a salad, mostly iceberg lettuce with 5 carbs of dressing, and my 2 hour post reading has been in the 70s/3.8, whereas before 5 weeks ago the normal reading was in the 90/5 to 100/5.5 range.

As far as I know nothing else has changed. There is a bit more physical activity, but not enough to make a difference (walking less than 20 yards).

I'm being forced to eat an afternoon snack, never had that happen before.

Any thoughts would be appreciated.

If I had to make a guess, I'd say that the fiber in the salad, and the fat in the dressing and the culprit. I make chef's salads for lunch sometimes, and I bolus for a few crackers and whatever carbs are present and I almost ALWAYS go low...I finally just started backing off about 1/2 a unit of bolus whenever I eat salad, either alone or with something else.

Maybe, just maybe, the actual digestion of the lettuce is consuming more energy than it is providing? Sort of like the old wives tales about celery?

I can't believe you've been eating a ham sandwich every day for several years!!! That blows my mind! LOL! I don't like to have the same dinner twice in a month, let alone every day, for years!

there is nothing wrong with liking the same stuff - hey when I was a kid I only ever used to eat weetabix and bananas. :)

as for the rzrbks question - I would point my finger at fat/fiber slowing down absorption of the carbs. The new fast acting analogue insulins are often too quick for medium to low GI foods.

Is the salad dressing made with vinager? Lemon/vinager is supposed to break down the carbs so I read many moons ago.
Perhaps that's what is causing the lows.
