Previously I thought I wouldn't be able to eat tacos anymore. I really like the tacos I get at authentic Mexican fast food places here in the Chicago area.

They use two six inch corn tortillas on one taco. So I checked out the carb content on these tortillas at the grocery store. 10 or 11 grams. Also corn tortillas are lower glycemic compared to flour tortillas. So two tacos would consist of 40-44 grams. On a pork (pastor) taco they also add onions and cilantro. So if I stay away from the chips and drink diet coke, I don't have to avoid this meal.

I just had two tacos today for lunch and ate about 5 chips and measured my glucose level two hours later and it showed 144. Next time I'll exercise before I have that lunch to hopefully make it under 140.

I enjoy the occasional taco or burrito myself. I smiled when I read that you counted out 5 chips...because 7 is my "magic number" chip-wise. Hubby thinks its funny, but if I didn't watch myself I could eat TONS of chips and salsa.

Isn't it nice to know that you don't have to give up all the things you enjoy? I enjoy them even more now that I did before diagnosis, as I eat them less frequently and chew a little more slowly to savor each bite. Glad Mexican worked out well for you blood-sugar-wise.

Linda, you're so right about enjoying things even more now. I'm being a scientist right now trying to figure out which things are okay and in what amount.

Good luck with that! Odd thing about diabetes, one time I can have something and do well; another time, i'll have the SAME thing with different results. For the most part, Mexican and even Chinese (with brown rice) are okay for me.

Except for white rice and dinner rolls....I can't do these at all without disastrous results!

I do really well if I limit myself to 2 tacos.........ground beef, cheese, lettuce, olives, and topped with sour cream. YUMMY!

And if my memory serves me correctly, Nancy, you ate just as many as I did. In fact.........wasn't that our dinner that night because our blood sugars were high? LOL

I'm having Taco's tonight and love them. Ol' El Paso mix and taco shells (limit myself to 3 shells) but lots of ground beef with peppers, onions, lettuce and the odd chilli or two. I have avoided the sour cream as I losing weight. Can't wait to get home and make them.

I will eat 3 crunchy taco supremes and my sugar 2 hrs later is like 80. usually under 90 before the meal.

Taco meat vegetarian style?

Heat 8-12 Morningstar Farms Original Grillers in a large skillet until unfrozen (medium-low) or thaw in advance to speed things up. Tear up into small chunks by hand throwing them back into the same skillet stirring occasionally. Don't overcook, just brown slightly. Add 2 cups water and 2 packages of Old El Paso taco seasoning. Stir well and simmer until liquid has reduced adding water if needed. Will keep in the fridge for weeks.

This stuff is real easy and even meat eaters like it. There's so much flavor going on the only thing you'll miss is the saturated fats.

I like to eat tacos in "salad" form - i.e. instead of all the meat, cheese, lettuce, etc. inside the shell, I make a "salad" out of it, and then crunch up multigrain nacho chips into it. It's really really tasty and it lets me have a bit more control over the carb value. That way I can fill up on the "filling" and have less chips if I want to. Plus, since you eat it with a fork it's much less messy than a taco in a shell.

In fact...I just had some for lunch! :) Mmmm......

I agree Keith! Morningstar is great stuff. Their fake chicken nuggets are BETTER than the real thing. I have made tacos with the griller and personally, I like it better than ground beef. :)

Oh, I'm really missing the tacos at Chipotle (chain owned by McDonald's)...I don't think they have a location in N. Florida...I loved the Chipotle's in Chicago! Carbs weren't a problem, but they had loads of hidden calories....they were so good!
