Today, I tried the chocolate-peanut butter fudge recipe that I've seen several times on the internet. It called for powdered erythritol. I used granular and wasn't too happy with the grainy sweet fudge that it rendered. It occurs to my mind now that the sweetener could have been whirred in the blender for a powdery consistency.
Powdered or granular, how are you list mates using erythritol? I've got 3 lbs of the stuff now, and really desire to not waste it.

Erythritol is better than any of the other sugar alcohols, as nearly 100% passes through without being metabolized. End result, it should have a glycemic index of 0. As with the other sugar alcohols, it does also have a cooling effect. However, it lacks the laxitive effect that is normally experienced with sugar alcohols.

If you are going to use a sugar alcohol for sweetening, erythritol is the safest and easiest on the system, so DO NOT waste that package! You can indeed put it in a blender to make the crystals a fine powder for cooking.
