We were eating at a local Mexican restaurant yesterday that had a really decadent dessert...and I wanted to try and make a more blood-sugar friendly alternative for our Valentine's day meal. I haven't tried this, but it sure sounds good! It may not be low-carb enough for some, but I think as a treat it would work.
Chocolate Burritos
2 low carb tortillas (Mission brand 12 carbs/7 fiber each is what I buy)
1 s/f hershey bar (10 carbs) or 3 Dove dark choc. pieces (14 carbs)
Roll chocolates inside tortilla, folding like a burrito. Freeze for 20-30 minutes (i'm thinking these should be chopped first).
-Drop in heated oil and cook on top of stove until crispy and chocolate is melted. Drain on plate.
Arrange on plate, drizzle with s/f chocolate and caramel topping and s/f top Kool Whip. Top with cherry or nuts if desired. One burrito would be a serving.
...actually nuts might be good inside it as well.
Also...if you've got a good diabetic dessert to share....please do!
