I've been doing really well, watching what I eat, exercising daily (not this week do to my back going out :mad: ) BG average doing good my wife decided to bake some brownies...mmmm!

This may have been posted before but they were good!

BROWNIES FOR DIABETICS
1/2 c. butter
2 eggs
2 oz. unsweetened chocolate
3/4 c. all-purpose flour
Sweetener equivalent to 1 1/4 c. sugar
1/2 tsp. vanilla
1 tsp. baking powder
1/2 c. chopped nuts

Preheat oven to 350 degrees. Cream butter and sweetener. Add melted chocolate and beat until smooth. Beat in eggs and vanilla. Add flour, baking powder and nuts. Beat until smooth. Pour into a greased and floured pan. Bake for 30 minutes. 1/2 bread and 2 fat exchanges.

Hint: Ingredients to be cooked should be at room temperature unless otherwise stated.

hmm, maybe make them low carb and add some bacon :vroam:

Of course you wife loves you, you are a wonderful person Dave! The brownies sound great, I wish someone loved me enough to bake them for me.:) Hubby did make some cabbage rolls without rice for me.

Of course you wife loves you, you are a wonderful person Dave! The brownies sound great, I wish someone loved me enough to bake them for me.:) Hubby did make some cabbage rolls without rice for me.

What size baking pan and how many servings?

It's a small recipe, she baked it in a small baking pan maybe 8x8, with about 10-12 servings, weird the recipe doesn't say what the pan or how many servings?

Well, Ant Hill, it's hard to describe exactly what it is about brownies that is so enticing. They're thicker and more substantial than cookies, chewy, fudgy, rich--rather like a very dense cake--but they're not heavy.

O.K. I have just been indulging in food porn. BAD Scrabblechick!
