View Full Version : Low Carb Cheese Cake

I have not tried this but it sounds delicious....thought I would share with my forum friends.

Crust:
1 cup Chopped Pecans
3 TB Melted Butter
3 tsp Splenda

Filling:
1 8 oz. Cream Cheese
8 oz. Sugar Free Cool Whip
1/3 cup Splenda

Combine pecans, butter & splenda in mixing bowl. Press mixture into pie pan. Bake 10-15 mins (375)

Soften cream cheese, add splenda. Mix cool whip in completely. Pour on curst. Chill 3 hours.

Note: Can add lemon flavoring or other flavors.

Tammy that does sound good! I've made a splenda cheese cake before that had to be baked, and really enjoyed it. For a topping you could cut some strawberries and/or blueberries or add some splenda to the strawberries for a juicy topping.

I've found I have a good tolerance for cheesecake, even regular (as in not sugar-free). Hubby and I will sometimes half a dessert of this at the restaurant with surprisingly good results.

I think that sharing desert is a great idea... I'm not a big fan of Splenda and such so if you can get the same "kick" from a smaller portion of something really tasty I say go for it... I'd rather than any day than filling up on something bland :D

If you're going to try the "real thing" dessert-wise, be sure and check your blood sugar to make sure it doesn't affect you negative, as what works for one of us doesn't necessarily work for the other.

I'm thinking that the protein in the cream cheese has an effect on this...though maybe the planets were just in line and I got lucky! ;) Wish it were the same with birthday cake....but its not for me...as I learned this the hard way!

Now if they could make a great tasting low fat and low sugar cheesecake I would be on board! I love cheesecake. It is probably one of my favorites.

I hope someone will try this and let us know if it really tastes like cheesecake. That's my very favorite, and I just bought a frozen one at Sam's yesterday -- hoping the carbs indicated for each slice will be manageable on an occasional basis. I've seen numerous recipes for cheesecake, all VERY Difficult -- requiring cooking in a water bath, etc, so had decided to never attempt one. This one sounds SO EASY, which, being a guy, is my number 2 requirement for ANY Recipe (#1 obviously is taste). Who will be the first taste-tester?

I must say that there are some very good low to no fat with out sugar recipes. I put up a couple that were pressure cooker types. I hate to admit the one I like the best more or less "blew up" in the cooker and made a big mess. Still don't know why the first one worked great.
If you get on line and search for what your looking for you can be amazed at the choices. Some of them must be good.

Just to note that sugar free cool whip has more carbs then regular or low fat cool whip.

YES, I discovered that myself as well! Lots of "sugar free" items actually have more than their "lite" or "low fat" counterparts! Always read labels! I found this true also with SF pudding cups!
