This rather odd-sounding combination is TO DIE FOR!! It's one of the most-ordered desserts at restaurants around here. And now, Ta-da! In a lower-carb, lower-cal version...
FIRST LAYER
2 cups coarsely crushed pretzels
1/2 cup melted SmartBalance or equivalent
3 tablespoons Splenda
SECOND LAYER
1 (8oz) pkg cream cheese (or neufchatel, has 1/3 less fat)
1 cup Splenda
2 cups whipped topping (small container)
THIRD LAYER
S/f strawberry flavored gelatin, equivalent to the large box of regular strawberry gelatin
2 cups boiling water
1 (10 oz) box frozen (or fresh!) strawberries
Preheat oven to 400 Fahrenheit.
Combine ingredients for first layer and spread into a 9x13x2-inch pan. Bake 8 minutes. Remove to cool.
Second Layer - Beat Splenda into cheese, stir in whipped topping. Spread over cooled pretzels.
Third Layer - Mix gelatin, boiling water and strawberries together and set aside 10 minutes. Pour over cheese mixture; chill thoroughly.
This is completely delicious! If you are taking a dish to a potluck dinner or picnic, this is a good one. Totally goof-proof! :D
