Susan...per your request:

Red Wine Vinaigarette Dressing

3/4 C oil (I use Extra-Virgin Olive Oil)
1/4 C. red wine vinegar (or for variety use Balsamic for good Balsamic vinaigarette..or apple cider vinegar with juice from 1/2 fresh lemon)
1 tsp salt
1/8 tsp black pepper
1 tsp dry mustard
2 tsp Worchestershire sauce
1 clove fresh garlic, crushed
1 tsp sugar (or Splenda for us diabetics;) )

Mix all ingredients in pint jar, cover with lid, shake and pour over lettuce.

interesting. a 3/1 oil/vinegar ratio. i will post my favorite in a sec and you will see the difference.

from Rick Stein's French Odyssey series.

take 1 or two cloves of garlic and crush on a board. add a pinch of salt and continue chopping/crushing the garlic until it is a paste. (fresh garlic is mandatory. the crushed stuff in the jar won't work).

put the crushed garlic into a small bowl and add 2 tablespoons of good red wine vinegar. (I use the Maille brand and refuse to use anything else now.)

also add to the bowl 1 teaspoon of dijon mustard. (i prefer "Grey Poupon" but the Maille is also good.)

Whisk together briefly.

Gradually whisk in 8 tablespoons of extra virgin olive oil and 1/2 teaspoon of salt.

Whisk until you have a nice creamy consistency.

I have tried doing this in a blender. It is much better when done by hand.

What happens to those of us that HATE garlic? I can take it in very small doses, but garlic not only makes ya stink, it keeps me awake like after drinking caffeine.

hee! LOL. well you must be unusual. i never met a garlic i didn't like!

you could make this dressing without the garlic quite happily. or you could reduce the amount to whatever you can stand.

the zing in the dressing comes from the vinegar and the garlic. but vinegar (if it is good and strong) will give you plenty of zing on its own!

Joel, your dressing sounds great as well.....I got my recipe from a winery we visit in NC....bought some of their red wine vinegar and they had the dressing made to sample...it was great! I love experiementing with different seasonings and vinegars. Not a huge garlic fan myself, a little goes a long way for me.

Try the worchestershire sauce added...its a nice change.

Nancy, if you hate garlic try this: Leave out all or most of the garlic and whisk in a little extra olive oil and some creamy peanut butter.

My recipe....

1) Walk to vehicle
2) Drive vehicle to Kroger/Meijer/Biggs/Walmart
3) Hunt for the salad dressing aisle
4) Pick up bottle of Kraft Catalina dressing
5) Check out and pay
6) Drive home
7) Make salad and add dressing


Gosh, that's a hard recipe :T

How many single guys do we have on here that eat salads? LOL When I'm married, it's even shorter....

1) Add salad dressing to grocery list for wife


Of course though, if she doesn't use coupons and compare price per ounce...she's not a good wife. LOL

Add 'ice packs' to your shopping list as well so you can put 'em on your 'delicate areas' after the aforementioned wife kicks you in them...

I can tell you are speaking as a long-time married and wise man Gary! :T

Kev, in our house, we shop together...and hubby carries in the groceries while I put them away...but i'm sure your wife will train you well....it may take us awhile, but we always do:D ;) !

I don't mind shopping, just the other shoppers in the store. Shopping is always to be completed after midnight and should be completed in less than 30 minutes. There is also no need to go out of the store with two carts full. Heck, even one cart full is too much.

A really simple one using my local cheese but other blue cheeses would be fine.
50gm Roquefort
2tbsp low-fat natural yogurt
1tbsp white wine vinegar
5tbsp extra-virgin olive oil
put the Roquefort into a food processor, add the yogurt, vinegar and oil and whizz for 1min until combined. Season with salt and freshly ground black pepper.

Very good as a simple starter or lunch on romaine lettuce (baby cos), walnuts, garlic croutons (bake tiny bits of bread in oven with drizzle of oil and garlic for lower fat variety) and extra crumbled cheese.

My favourite easy salad dressing recipe:

Equal parts oil and vinegar (I use canola oil and white vinegar)
Splenda to taste
Deli mustard to taste

Mix it up and pour it on!

Oh the green stuff beside my meat!

I didn't each much salad before DX, each much more now and I actually like them, so long as they come with meat. Dressings sound great, love Garlic, love mustard.

Nancy, I didn't always like garlic, think it is an acquired taste, but fresh garlic is so much better than dried/processed stuff.

Oh yes. After many, many years I fully accept that a man's place is in the wrong.

As to the salad dressing. I'm not really a measurements kind of person with salad dressing. I just go by eye and adjust if it needs it. But one of my faves is:

Balsamic vinegar (really, really good stuff)
juice of 1/2 a lemon
Sherry vinegar (because ingredient A (above) is too expensive)
Extra virgin olive oil
garlic (optional for the 'garlic fairies')
mustard (decent Dijon or wholegrain)
Sea salt flakes
Fresh ground black pepper. And a hint of sugar if you must (but I don't)

Mix sherry vinegar and lemon juice with a few drops of the balsamic. Mix in the salt flakes, pepper, mustard and (if using) crushed garlic. You must mix these in first as, if you add the oil too early, the salt won't disolve and then you'll be sorry. Whisk in the oil until it emulsifies. Throw over whatever leaves you have. Or for those not carb-shy, boils some new potatoes in their skins. Drain and (whilst still hot) toss in this wonderful vinigary dressing. They slurp it up. Toss with loads of fresh chopped parsley for a fantastic alternative to the mayo fest that is potato salad. Eat whilst still hot, but they're pretty good warm as well. Had these tonight with pan-fried salmon, corgettes (zuchini I believe some folks call them) and green beans.

Linda and Nancy, We use Nancy's dressing for our fish tacos! Or fish taco salad.

We frequently crumble blue cheese on top of salads dressed with italian dressing.

We also whisk Smucker's sugar free jam into vinaigrette to dress spinach salad with blue cheese and candied walnuts (not too many for me :o )

Depends on if you ask a man or a woman. If a woman asks if she is wearing red he is wrong, cause it's most likely maroon or rose red or fire engine red. Red just doesn't exist to women. :T

On topic, I've truely never tried any other salad dressings besides Catalina. Well, I've tried but never liked. And one bottle of Catalina goes about 3 times faster than it should with me.

Catalina dressing? Isn't that kind of a FIRE ENGINE RED?:D

I suspect many of us diabetics overindulge in salad dressing. One of the few things we can get away with.
