This recipe makes a light moist muffin.
Dry ingredients
2/3 cup soy flour
1/4 cup oat flour
1 Tablespoon baking powder
1/3 cup splenda
1/3 cup brown sugar splenda
pinch salt
1 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon nutmeg
1/4 teaspoon ginger
1/4 cup walnuts
Wet ingredients
1/4 cup applesauce
3 eggs( I use egg beaters)
1/4 cup heavy cream
1/2 cup blueberries(if frozen, do not thaw)
Topping
2 tablespoon rolled oats
2 tablespoon oat flour
1 tablespoon splenda brown sugar
Combine wet ingredients(except berries)mix until smooth. Gradually add dry ingredients, mix well with large spoon until dry ingredients have combined with wet. Do not over mix. Fold in blueberries. Spray a 12 muffin tin with Pam. Spoon into tins. Evenly sprinkle topping mix over 12 muffins. Bake at 350F for 12 minutes.
