This is another of my favorite low carb dishes.
Take 6 eggs and 2/3 cup of milk and beat them together in a bowl. Stir in some hunks of sausage, cubed ham, crumbled bacon or whatever else you have lying around, and some shredded cheese. Stir it all together and pour into a greased 9X9" baking dish. Bake at 325*F for 45 minutes; it will be all puffy and golden brown and delicious.
For a 9X13" pan, use 16 eggs and 2 cups of milk, 1-1/2 cup meat of your choice and 2 cups of cheese, and bake for 1 hour.

I like baked eggs. Have you tried doing it in the Micro? I really do that alot. Saves time & energy.;)

yanno whats weird is....i was so cravin this breakfast casserole my mom used to make but its got waaay too much carbs cause you make a biscuit like dough for the bottom and then i read this and realized i could make it without that and still be happy prolly lol

Do you think this would work with just egg whites? Or maybe with eliminating some of the yokes but not all?

I do a similar thing in a 4" skillet. :D
I get some Roma tomato's and dice them and any ham or bacon and fry them with Olive oil and dice red onion and beet three eggs and little milk and pour in the pan then get some slices of cheese on top then in the grill till golden.
Now this is where you would need the bolus and toast two slices of bread. :D

I thought of that too; I have a bunch of egg whites in my freezer from when I made ice cream. I don't know why not!
