I know this sounds crazy but I eat very low carb except for the odd bag of popcorn.

If I have popcorn in the evening my numbers are lower in the morning. Has anyone else found that eating popcorn improves your numbers.

It takes a lot of popcorn.. something like 3 cups to make 15g of carb, especially if it is plain or just lightly salted. It's a good low carb snack. I always loved it as a kid because I could eat so much of it for one of my "bread exchanges"

I buy the mini bags of microwavable popcorn and have had no problems with them. I've not noticed lower numbers afterwards though.

Yeah, the single serving bags of microwave popcorn are just about right for me. I like popcorn, but don't eat it very often. The hulls stick in my teeth too much.

WOW!...Im glad you said something, I just bought some of the Orville Reddenhead Organic individual bags just 2 weeks ago, and I have discovered it DOES lower my morning numbers!

I think it's the fiber. I love popcorn!

Disclaimer: I speak based only on my own observations...

Popcorn appears to be low-glycemic. I cover it primarily with NPH, which has a 5.5-hr completion time in me.

Just last night, I severely underestimated my popcorn intake. Two-hour pp was fine; 3hr pp was 177 (corrected with aim for 100); and I awoke during the night (waaay post-prandial) with 170.

My guess is that the slow CHO release triggers your insulin release... then gives the insulin a chance to do its job.

One of my favorite ultra-low glycemic foods: Tinkyada whole-grain brown rice spaghetti. You might try it to see if it has a similar effect.

Snacking on popcorn in the evening 9PM lowers my morning numbers too. Also low-salt or no salt dry roasted nuts.
I was recently concerned about my weight so stopped eating a snack at night. My AM #'s got worse and worse. Some here suggested going back to a snack so I looked in my log book and low and behold they were right. When I was eating that bedtime snack my #'s were lower.
So now its a matter of balance. I'm going to try eating a small snack at night and walk 3 times a day instead of 2.

My evening meal on Sundays consists of 20 Carbs of Cashews and 1/3 cup of Orv Rech's popcorn, and I quickly learned that using the NET carbs (Carb less fiber) STILL left me on the low edge of acceptability in the AM, even though I was on the high edge of acceptability when going to bed. I've decided this is totally acceptable to me.

Wow.....am I the only one that has a hard time with popcorn? I have a tough time with not only the immediate numbers, but the oil comes back to haunt me later. I have tried to dual wave bolus for it, but it is tricky for me. No fair! I love popcorn.

Ah, pop corn. I remember my first diabetic experiance with it. Hubby and I were looking at houses adn I was starved. I took a free bag of pop corn a realitor had out. I didn't have my meds with me so I figured my numbers would be horrid when I tested. THEY WERE NOT!!! I was very happy :) Now I love to treat my self to a microwave bag of no butter pop corn, drizzled with olive oil and a 4 cheese seasoning on it. I never have a problem with it.

Are you certain it's the oil? I'm curious to know what would happen if you tried some dry.

I've not eaten enough popcorn to have it correctly profiled yet. However, it seems to be about 20% rapid (1:15 finish) and 80% NPH (5:30 finish) for me. I suspect the shape would resemble a delayed square wave...

So I thought I would test popcorn last night. Had a nice big serving. 1/4 cup dry popped up to 3 or 4 cups. Used a small amount of butter mixed with canola oil. My bg this morning was 93. Yeah!!! That is the lowest its been in weeks.

I will keep trying with popcorn. I guess I haven't found the magic dual wave bolus for it yet. Weird thing is.....I can eat pizza (although I am not a big fan) with no problem. I am pretty certain it is the oil it is cooked in that raises me high a few hours later. I am not a fan of microwave popcorn.

Well.... there ya go. You're not a big fan of pizza, so of course it'll be the easy one to handle. ;)

I only have one problem with eating Pop Corn. I do not know when to stop. I tried buying the small serving bags I just pop 2 or 3 at a time because 1 is never enough.

I do find the light butter is better for my bg that any other type except when I do make it over a camp fire in a cast iron skillet with just a touch of good old fashioned Crisco.;)

Oh and by the way be sure and purchase a few boxes from your friendly Boy Scout member this fall. Trails End is a great popcorn.:D

SInce you do not do the microwave popcorn you may try spraying your popper with one of the nonstick sprays. This will help the popcorn pop. Another good way is to put your popcorn in an airtight container and add olive or canola oil. The oil saturates the corn so it does not take as much to pop and so you do not has as much fat after effects. You can actually leave the oil in for days and shake the container from time to time to distribute the oil. Spices can be added to the container to add extra flavor!:D Yummy. This is anoter trip down memory lane of a few things Daddy used to do with the popcorn to change the flavor. It was a nightly treat growing up without TV.
