View Full Version : Help, need BG friendly marinade for Chikcen Kekabs

Hi all,

I'm hoping one of you cooking gurus can help me. I have our first BBQ of the year this Saturday, I'm kinda known for my chicken kebabs and have been asked to bring them with me, problem is my normal marinade contains honey and I'm guessing is not BG friendly, now I don't mind making it for everyone else but if I could get a BG marinade friendly it would be even better as I could join in the feasting.

Any suggestions?

Here's my D-safe marinade.
Chicken (1 lbs)
1. Olive oil - 1/4 cup
2. Corriander powder - 2 tbl spoon
3. Chilli powder - 1 tbl spoon
4. Dry parsley or basil poweder (little)
5. Ginger paste (2 tbl spoon)
6. Garlic paste (2 tbl spoon)
7. 1/4 cup low-fat yogurt.

Mix all the above in a bowl or a food bag and add salt to taste.

I'm not sure if you consider this a lot of ingredients but, it taste a whole lot different.

To be honest the news of Jack's death has taken the wind out of my sails and the marinade seems so trivial now. But thank you for responding.

Why not turn a sad event into something worth remembering? Set an extra place at the table. Fill the plate with bite size low carb finger food. Chicken Nuggets are about 2.5g of carbs each. Jalapeno Poppers are about 9g or so. Then each person can have a bite and share the meal with Jack . . .

That's a really great idea and I know my friends would be happy to take part even though they will not have heard of Jack. We will all raise a glass in his memory.

Olive Oil
Lemon juice : Freshly squeezed
Onion : Finely chopped
Garlic : Minced
Salt
Pepper

Optional= Fresh cliantro : chopped

Simple and delicious!

The easiest and best tasting marinade for kebobs can be simply make up packaged Italian Dressing and let em soak. It is delicious. I use red wine vinegar and oil.

Thanks all, I did make a marinade, in fact I made two:

Not so BG friendly (can't remember measurements off hand):
Honey
Vodka
Low Salt Soy
Garlic (minced and sliced)
Olive Oil
Crushed black pepper
- Whisked all above together in bowl, then added, diced red, green, yellow peppers, onions (poured some marinade into separate bowl for use when grilling) add lots of diced chicken. Allowed to marinade for about 3 hours in fridge. Then used peppers, onions and chicken to make up skewers, as I cooked them on BBG I poured some of marinade over them as they cooked.

The second one was more BG friendly and kinda based on Jerk Chicken:
Ground allspice
Chopped fresh thyme
crushed black pepper
Ground nutmeg
Crushed and sliced fresh garlic
Olive oil
Glass of white wine
juice of a lime
3 green chillies (couldn't get habeneros)
3 Green onions -- finely chopped
1 Onion
2 Plum tomatoes (tin)
4 chicken breasts (skin removed) scored chicken
- Ground chillies, green onions, garlic, spices, thyme, pepper in mortar & pestel with lime juice and little olive oil. Transferred everything to zip lock back with onion, tomatoes (and juice), wine and chicken, marinaded for about 3 hours.

They both turned out well, before serving I asked everyone to raise their glass to Jack, which they were happy to do.
