I need some ideas; I find that I often want a snack in the afternoon, but I prefer not to take insulin then. I do it if I have to, but ideally I prefer to keep insulin to meals if I can.
I've had nuts, raw veggies, etc...but I'm getting bored. And I really don't like eating meat as a snack.
Any ideas?

I hope you get some good ideas, I could do with some too. I only have two:

- canned tuna, those little flavoured cans are very filling, some are no/next to no carb at all. Although the sodium content could be a worry.

- Cooked vegetables!

Oh, and water.

edit: Have you checked out GI lists and gone for the very bottom? Some particular foods, often things like lentils, beans, etc, may have a very slow impact on your BG, enough to skip the dose (or keep it extremely low, if that's still useful).

edit 2:which I just realized will probably be more veggies which may not be what you are after, but at least they might open your variety of veggies :)

Sugar-free Jello.
You could also try making a Sugar-free Kool Aid slushy.
(Sorry but it's hot and humid here and my brain is thinking cool and refreshing)

Celery with cream cheese or peanut butter spread on it.;)

Pickled eggs, hot dog, sausage.

Cook some chicken and make a chicken salad with mayo.

Today I had a bag of pea pods. Then I was given a large bowl of whole strawberries because they were too bitter for my coworker.

I personally like sliced turkey wrapped around string cheese. Popcorn also is pretty low carb for the amount. Most are 5-6 grams per cup.

Peas with soy sauce.

Oh and coffee and more coffee and then decaffinated coffee, maybe tea afterwards if I feel like it later.

what about "no sugar added" chocolate or Lindt 85% dark chocolate.

the latter is not ZERO carb.

-cooked soy beans either plain or with a pinch of garlic sea salt
-i know you said you've had nuts, but have you tried a mix of almonds and craisins? mmmm, craisins have a few carbs but if eaten in a small amount along with the almonds, it makes a perfect snack amount
-Diamond brand soda crackers...they're 12 grams carbs each packet
-or apricots...they're perfect sized perfection:top:
