Ok, so it had been like 10 years since I had a nutrition consult (I know, I hang my head in shame for waiting so long), and I finally got in for a more than slight brushup. I can't believe how much has changed in terms of carb values and ratios of food we should be eating to keep our bg's at a reasonable level! I found that I was doing it all wrong.

Here I thought I was doing good and eating pretty healthy, but since I went in for this nutrition consult, my bg's have been beautiful because I have cut my carb intake by at least half (no wonder I wasn't losing much weight) and upped my veggies/lean protein intake by a lot more than it was previously. And, I have noticed that spikes are not happening as much to me because I am making sure to have a protein source with any carb that I eat.

I guess that I unknowingly ran into that mentality that since I am a T1, I can just cover stuff with insulin and eat whatever. But, that mentality made me go out of control with the eating of carbs. Basically, I am just so excited with my newfound knowledge, and am even more excited to be seeing some great results with it!! Just had to share :)

Good for you Laura Anne! Since being on DF, and reading more about low carb eating, I have learned what you learned. Congratulations -- I know exactly what you are talking about!

And no doubt the more militant low-carbers here will claim this is 'proof' that carbs are evil and we should never eat them.

Good for you - you're now eating sensibly. Just because you can technically cover the carbs you have with insulin doesn't mean you have free reign to stuff yourself with them. A normal, healthy balanced diet is, as ever, the way forward.
