Found this on the "Hood Calorie Countdown" website and thought it sounded good for Thanksgiving (which will be here before you know it). I've not tried it yet, but it looks quite easy...and yummy.


PUMPKIN PECAN PARFAIT

Makes 8 Servings
1 cup Calorie CountdownTM Fat Free Dairy Beverage*
1 15-oz. can pumpkin
2 pkg. (4-serving size each) sugar-free, fat-free vanilla instant pudding and pie mix
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1 cup Hood Whipping Cream
8 ounces low-fat cream cheese, softened
1/4 cup SPLENDAŽ Granular
2 teaspoons vanilla extract
1/2 cup finely chopped pecans
In a medium bowl, combine Calorie Countdown, pumpkin, pudding mixes and spices. Beat until well blended. Set aside.
Whip cream until stiff. Set aside.
In a medium bowl, mix cream cheese, SPLENDA and vanilla extract. Fold whipped cream into cream cheese mixture.
To assemble, spoon 2 T. pumpkin mixture into parfait or small wine glasses. Add 1 T. cream cheese/whipped cream mixture and 1/2 T. pecans. Repeat once.
Per serving: Calories: 244; Carbohydrates: 11 grams; Fiber: 3 grams; Protein: 6 grams; Calcium: 103 milligrams; Fat: 19 grams; Saturated Fat: 9.5 grams; Cholesterol: 50 milligrams; Sodium: 225 milligrams

*Can substitute 2% Reduced Fat variety as well.

This sounds interesting Linda! Here's how I would make it:

1 cup [soy milk]
15-oz. [baked pumpkin]
8-servings [vanilla pudding from scratch]
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1 cup [any] Whipping Cream
8 ounces [any] cream cheese, softened
[4 Tbsp agave nectar or raw honey]
2 vanilla sticks
1/2 cup finely chopped pecans
