OK. Heres what the label states:
10g of digestible carbs!
farther down...
45g of carbs!
So how much insulin am I supposed to take here?
Im very confused.

Yeah - I would be confused too.
I looked into this "protected carbs" thingie and found a lot of blah blah blah on the google.
Since this stuff appears to have very different results from person to person, I would take it real slow, try small amounts, err on the side of less insulin and see what happens. Slowly increase insulin as you gain confidence with it.
I've been hearing about this Dreamfields since I joined DF - and finally found some. It does work better for me than traditional pasta - as in, less than half the spike of the regular stuff.
I do wonder about this magic proprietary mysterious "protected carb" business though...

I had the same question when I ate it the first time. I just did trial and error until I found what worked best for me. If I covered based on the total number of carbs (say 45 grams) I went way low...I ended up figuring out that if it says there are 10 grams of net carbs I need to take 2 units of insulin (my I:C is 1:10). But that's just me...
It's really not too bad (tasting), my husband who is a pasta snob didn't realize that's what he was eating the first time I used it for dinner. It kind of gets mushy if you reheat it, though...doesn't really stand up as a leftover.
So, my probably not very useful advice is try it and test, test, test...when I was experimenting I ate only a single serving size (by weight).
And then sometimes I'll eat it and my blood sugar will spike...so as with everything else once you get it figured out, it can change on you.

Maybe you are only supposed to injest 10 of the 45 grams of carbs in the serving???

I've eaten Dreamfields for the last 2 years. One thing, do NOT over-cook it or it becomes mushy and just doesn't taste good at all. I've also heard that when overcooked it works more like regular pasta on the carb content. Two: on their website is shows each serving relates to approximately 5 net grams of carbs. I NEVER spike when I eat it, not even 3, 4, and 5 hours later.
Lastely, I've reaheated it as leftovers many many times and it tastes just as good. This might be relative to how far you cook it the first time :) Good Luck!
I'm a pasta snob too, but Dreamfields is pretty good stuff. The others I cooked it for didn't realize it was different from regular pasta.
It does spike me a bit, but not close to regular pasta.
