View Full Version : Running out of ideas - Need help

I'm trying to keep my lunch under 40 carbs if possible, but I'm running out of ideas. I'm counting cholesterol too so it's got to be low fat.

Anyone want to share some meal ideas?


For lunch today, I had...........

2 low carb tortillas- 8 carbs
2 lightlife veggie franks = 4carbs
2 tablesp cheese conqueso = 4 carbs
2 tablesp salsa = 4 carbs
1 serving goldfish chips = 17 carbs

Total 37

I probably could have cut out the goldfish chips but they're sooooo cheesey :-

I grab lunch on thge run. So it has to be simple. My current favorite is a slice of wholemeal bread (15 carbs) and a tin of sardines (23 protein and 13 fat). Doesn't sound like much. But I find it very satisfying.

Are you at home at lunch time or are you at work? If you're at work preparing the meal at home and then putting it in a plastic container is a practical idea which proved very useful to me when i used to work.

Some ideas:

-pasta salad including lots veggies in it like tomato and red pepper (anything you like really) + portion of fruit (say 1 orange) - takes care of the carbs, is not too dry a meal because you can add 2 teaspoons of, say, olive oil and is very healthy

-rice cakes + string cheese or any lowfat cheese you like, sliced to place on rice cakes + various veggie salad + portion of fruit + pistacio nuts (makes a mess but it's full of beneficial minerals

-an interesting sandwich!:)

What I notice is that you pack a lot of pre-=processed things. Youbmight consider packing strips of veggies like peppers, celery, leafy lettuce in the breads-a little lo-carb dressing to have the benefits of fresh enzymes and carb-reducing compounds. They're filling too and keep well. As for cheese, old cheddar has far feweer carbs.

Two things I always try to keep in the fridge ready to have with a salad for a quick lunch are devilled eggs and baked chicken drumsticks. They're handy snacks, too, if you feel the need for some protein to tide you over till your next meal.

Try the 100 calorie packs from keeblers...they are great :thumbsup:
