Right now I'm sticking to the following :

Breakfast -
Oatmeal with a bit of skimmed milk
Fruit (whatever's in the fridge)
Coffee, I try not to have more than 3
Week-ends mean I'll have muffins I've made or peanut butter on (2) toasts
(and definately more coffee!)

Lunch -
Will often make myself a little vegetable stir-fry & 1/2 cup of basmati rice
Can be a tomato sandwich with lettuce, cucumber & a thin slice of chicken
Or home made vegetable soup with slice of wholewheat bread

Dinner -
I cook a lot and I like variety. Whatever I make, I always make sure there are lots of different veggies, they are my main course, meat is more a side now. I'll seldom have dessert. If I do, it will be fruits. Love mellon!

Snacks -
I don't have them all the time. Low fat cottage cheese and fruits. An apple and a bit of cheese. Or carrot sticks. Love those...

Breakfast:
2 slices whole wheat toast w/ a pinch of butter and a tiny bit of jam. 2 slices of bacon & a cup of coffee.

Lunch:
3 oz meat (usually chicken or ham) & a piece of fruit.

Dinner varies a lot:

Big salad w/ grilled chicken

4 oz meat + rice + veggies

Take out a couple nights and Mexican food on Saturdays

BTW Jared, peas and corn are considered starch and don't count as a vegetable.

CDE and Dr. try to keep pounding into my head that basically anything a healthy person eats, we can eat. The questions for me are

"Carb Count?"

"Is it healthy?"

"Does it fit into my meal/calorie plan for that day or time or situation?"

PLAN...THERE IS A PLAN? I just eat what ever I am in the mood for :1eye: but it generally doesn't vary tooo much. but there is no plan or calorie counting etc..going on here... :p

If I'm walking 27-36 holes on an afternoon when it's 100F/38c+ outside or below 30F/-1c , I'm certainly gonna keep track of what I need to get through that.

I strongly disagree with medical professionals who tell us we can eat anything a non-diabetic eats. I manage my diabetes with a very low carbohydrate diet and keep my blood sugars perfectly normal. Here was yesterday's menu and resulting blood glucose results:

Fasting BG: 4.1 (74)
Breakfast: Mock Danish (see recipe section)
2 hours later: 5.1 (92)

Before lunch: 4.2 (76)
Lunch: raw veggies (baby bok choy, sliced cucumbers, and green beans) and a bowl of chicken and cabbage soup (homemade and low carb)
2 hours later: 5.4 (97)

Before dinner: 4.1 (74)
Dinner: Low Carb Chile Con Carne (see recipe section)
2 hours later: 5.5 (99)

Before bed: 4.3 (77)
For a bedtime snack, I had a homemade low-carb baked custard.

This is funny that Jared posted this...I had posted practically the same topic (just under a different title). It looks like we both posted this at the same time too...I guess great minds think alike, huh Jared (j/k :p ) lol :D .

I don't think my post got many responses, but that's ok... since I am finding out what exactly people eat thru this post.

What I eat...

Well, it definitely depends on mood, craving, whether I am rushing, etc.

Generally, I have:
Breakfast:
Multi-Grain cheerios with skim milk
or
A mini-bagel w/ cheese and an egg.

Lunch: frozen entree like Lean Cuisine or Smart Ones (WW)

Dinner: Maybe another frozen entree or sometimes I order something in.
Or
A hamburger on lite bread w/ ketchup and baked chips.

Dessert: reduced fat ice cream bar or
Baked chips
or
a mini bagel w/ cheese
or
chocolate :- hee hee hee

Plus I also tend to graze a little bit on this and that. Ugh!

A question for you Karen :

How do you feel with such low levels? Your hightest seems to be 5.4. I'm curious because I don't think I'll ever get used to low levels. With low levels like these, is it dangerous not to feel a hypo?

Between 5 and 5.5, I find it very difficult to get on with my day to day routine. First, the pounding in my head... and just can't exercise when I'm 5.5 or lower. I'd faint I think! When I'm between 6 and 7, I'd climb Everest in high heels. I feel just fantastic.

I'm nosey today :)

Am 1977 I agree "great minds do think alike" well this morning im trying to maintain lower levels and it’s killing me. My sugar this morning was 204. I slept like a baby last night. For some reason when my sugars are 300 and lower I sleep great. But back to the topic. I ate one piece of wheat toast and glass of milk and took 2 units of homolog. I will check 2 hrs later and see what this does for me. Usually I eat bowl of cereal and guess at how much humulog to take. NOT TODAY... hopefully as time goes on ill will feel better with 200's.

Karen, I don't mean to steal your thunder here.....but, I want to tell Marie, that we get used to levels. It takes a while to get used to a lower level, but we can.

Now, daily menu. I may be the only one on here with intestinal nerve damage as severe as mine is. I cannot eat more than twice a day......and it HAS to be small portions. Since my stomach has almost stopped, I have gained 40 pounds. Soooooooooo,

Breakfast.....
skip it

lunch.......
skip it

snack
protein........yes, I eat beef jerky........good, but painful. (nerve pain in tummy)

dinner......
1 portion of meat
1 vegtable
1 salad (at least three times a week)
1 carb

This menu changes when we go to the buffet that someone posted about......and then my boluses change also. I'm not posting blood sugars, cuz they have been MESSED UP lately due to a new med that has given me nausea as a side effect.......YUCK!!! But, prior to the med.....I was running blood sugars around 70-120 pretty consistanly. (if you don't count the lows).

There's nothing nosey about your question, Marie. I'm glad to answer it. I feel great at these numbers and have far more energy than I used to have. I started eating low carb 2 1/2 years ago in order to control my blood sugars, but I was pleasantly surprised at some of the unexpected benefits that happened - and end to my irritable bowel syndrome, lower cholesterol and blood pressure, huge improvement in the neuropathy in my feet, and an enormous increase in energy. The figures I gave were for that particular day. I occasionally go as high as 5.7 (103) two hours after eating, but that's about as high as I go, with the exception of last Christmas when I had two tablespoons of turkey stuffing and went to 8.2 (150)! The diabetic doctor/author whose book I follow says (as Littlebit points out) that if we've been used to having high readings, our bodies have been accumstomed to those levels, and it will take a little while to get used to the lower ones. I'm not on any meds, so hypos are not likely, and I've never had one.

Thank you Karen and thank you Liz for your answers.

I tend to associate anything below 5 with a lack of energy, and of potentially being too close to a hypo for my own comfort. Today I was so busy & active that I didn't eat much. I rrrreally felt bad at one point. Was 5.8. I don't know how long it takes to get used to new levels but after a few hours of heavy pounding in my head I gave up and had an apple with cheese. I don't think I'll ever get used to anything below 6.

I posted this in the thread started by am1977 also, not realizing that this tread was here. Sory for repeating myself, but I will repost it here. I follow the same diabetic author's book that Karen follows. I just wanted to add that he also believes that Diabetics are entitled to the same blood sugars as non diabetics. I have found the only way that works for me is by following his plan. This plan has given me excellent control and I have not had a severe Hypo since starting it. The low carb approach calls for much less injected insulin thus less chance of excess circulating insulin causing problems. My TDD dropped from over 60 units a day to right at 20 units a day after starting this plan. The lowest I have gone is in the mid 50's, but this has only happened a couple of times. I feel great in the 80-100 range. My goal is 90 at all times. Your body get used to these normal levels, and the more normal your sugars the better off you will be in the long run IMHO.

Copied from am1977's thread-
This really isn't a meal plan but more of a guide to how I plan my meals (I just copied and pasted it from my website).(looking for lazy smiley to put here). My diet is very simple and is as follows:

Breakfast: 6grams carbohydrate, 24grams protein.
Lunch: 12grams carbohydrate, 36grams protein.
Dinner: 12grams carbohydrate, 36grams protein.

All carbohydrate ingested is in the form of slow acting non starchy vegetables. (mostly mixed salads, green beans, asparagus, cooked and raw spinach)

Proteins injested: fresh poultry, pork, fish, red meat(on occation), soy. I stay away from deli meats as they contain excess carbs and bad fat.

Foods I incorporate that have both protein and carbs: cheese(full fat american), nuts (fresh almonds and walnuts eaten raw or roasted at home)*, eggs (organic), black olives, soy burgers, soy sausage, and on occation tukey hot dogs. (the carb and protein amounts of these foods are counted agianst my meal allowences)

I avoid foods with trans fats or unhealthy vegetable oils.

Main source of fats come from Extra Virgin Olive Oil, Macadamia Nut Oil, full fat cheese, Heavy Cream, Butter, Nuts, Eggs, Black Olives, Red Meat(3-4 times per month), and Cod Liver Oil(taken as a supplement).

I only eat these three meals in a day and do not have snacks. I space meals at least five hours a part, and eat my last meal of the day at least five hours before going to bed.

*store bought roasted or smoked nuts contain trans fat and unhealthy oils. Therefore I eat them raw, or I roast or fry them myself in Macadamia Nut Oil.

Having carefully read the book that Karen mentions, and talking it over with CDE and Dr., the main thing is to find the plan that works for YOU.

I live and a HIGH carb diet and as long as I cover the amount of carbs taken, the CDE and Dr. are Extremely happy with the numbers I continue to produce.

My worst A1c is 5.7 and the two quote I treasure are

Dr. "Whatever you're doing, keep doing Exactly the same thing."

My CDE, who wants me on pump but doesn't try and argue with my numbers, to another CDE: "What do you do with the Perfect Diabetic Patient?"

Each of us has to find the best plan/system that works for each individual.

I second that Rz! A person must find what works for them. Absolutely! And I'm the living proof of that (tried different things which made my cholesterol levels go up). But I'm determined to find exactly what works for me. Each person has its own 'secret' recipe I guess! :)

Having Huge Cranberry - walnut bagel (60 carbs)for lunch, as we speak/write.

Breakfast - 2 or 3 rich tea biscuits and a cup of tea

Lunch - I either dont have lunch, or just have a very small snack... another cup of tea and biscuit maybe... if I'm home.

Dinner - Usually chicken but made to a diferent recipe each night. Some times lamb (with mint sauce :) yum :) yum :) yum :) yum :) yum )... Usually with either brown rice, new/baby potatos or small portion of pasta. I dont like many veg but I try to have green beans or carrots most nights.

B4 bed I usually have a glass of milk, if i'm below 4.9mmol/l I will have yet another rich tea biscuit :)

I love fruit!!.. but I don't really eat any since i've been diagnosed, it always affects my blood sugar... except mellon but I get fed up with that. Mango's are my fave... i love all exotic fruit but don't eat any anymore!!

Have you tried berries? I can eat them in small amounts (about 1/4 cup of raspberries, for instance) on my low carb diet without it raising my blood sugar very much. That's the only fruit I can eat.

i find that eating an orange a day, while I'm out and about doing things, doesn't raise my sugars much at all, since at the same time, i'm buring off energy.

Most fruits contain lots of carbohydrates, though, Sillyboy, and that's what raises my blood sugars. I stick to a very carb diet (maximum 50 grams per day spread out over four meals) and that way am able to keep my blood sugars in the normal range.

I can eat apples, but i find them quite plain... I like my fruit to be tastey! :)

I only eat bananas now if my b.sugar is getting a little low, they really raise it... i've even had one at my mums house once to cover a hypo because there was no other sugary stuff in the house.

Thanks for the suggestions... but I'm not a fan of oranges mainly because I ate about a million of them b4 I was diagnosed last christmas to quench my thirst. I do like rasberries but blimey they're expensive at my local supermarket!!!

Does anyone know if kiwi fruits are high in sugar? I'd imagine they would be.
