... Oh! This one you must try. My children think this is junk food and they can never get enough of it. :whistling

Again, from a cookbook I use a lot : 'The Everyday Diabetic Cookbook'.

CHICKEN TIKKA - Serves 4

Tikka is a Hindi word that roughly translates to 'kebab'. You can also cook these on a barbecue.

If you are using wooden skewers, do soak them well in waterbefore threading on the meat to prevent them burning during cooking (a few hours). Allow the chicken to marinate overnight.

Per Serving (without rice):
Calories 204
g fat 11
g protein 23
g carbs 3

Ingredients :

5 oz (150g) low-fat natural yogurt
1 tbsp (15 ml) ground ginger
1 tbsp (15 ml) chilli powder
1 tbsp (15 ml) ground coriander
2 tsp (10 ml) olive or safflower oil
2 cloves garlic, crushed
a pinch of salt
1 tsp (5 ml) lemon juice)
4 medium boneless chicken breasts, skin removed, cubed

Place the yogurt, spices, oil, garlic, salt and lemon juice in a bowl and mix well. Stir in the chicken and place in the fridge to marinate overnight.

Place the chicken cubes on to skewers and place under a preheated grill. Cook for 8-10 minutes, until cooked through, basting frequently with the marinade. (You can do this on the BBQ too!) Serve with basmati rice and a side salad.

does this taste good without the chili powder?? I can't stand spice.. not even the smallest bit!

Sarah, I can't tell you... I'm the queen of herbs and spices. I use loads of them! You could probably forget the chilli powerder but coriander has a strong taste too... that perhaps you will dislike?

And for the vegetarians out there, you can do this same thing with tofu or paneer (special cheese available in Indian stores) and also a host of veggies!

(I'm a vegetarian from India, so I know my tikkas! :) )

hmmm, it may be - but all i can do is try :) and see if it is. I have been told by my mum that I have to cook to meals a week (dinner) so this could soon be on the menu!
