.. where do the carbs come from? Obviously, you've got meat and cheese and the incidental carbs from that. But I'm trying to avoid bread and processed **** carbs.

So, it might go something like this?

Half an apple with breakfast (usually with eggs and bacon or sausage)

A big old salad for lunch with chickpeas for flavor. (plus plenty of that previously forbidden fatty dressing -- without the corn syrup of course)

Dinner -- basic meat dish with veggies.

Snacks? Maybe apples with peanut butter.

I don't want to go severely low-carb. I've done that before; anything under 50g a day and I wind up feeling very very sick. I want to eat as close-to-nature as possible in terms of meat and fat and carbs, though. I don't have a steady number I'm looking for, just something that leaves the sugar cravings, messed up sugars, and weight behind.

Yep -- carbs from fruits, veg, nuts, incidental mostly. I throw in low-carb tortillas and pita to that list.

What is valuable in this thread is the range of information and approaches from a whole variety of members, ands quite a few meal and diet ideas.

One thing I have found extremely important in my current around 100-130g a day approach, is picking the right time of day for my body. I know from basal testing and general experience that the times of day I can deal with carbs about 3x better, is at the moment mostly between 7 - 10am and 5 - 7pm. Other than that, my resistance makes carbs and insulin a tricky prospect.

So during those times, I can eat some carbs and bolus, and get a very "expected" or minimal spike and a swift return to good numbers. If I eat the same carbs say at 2pm or 10pm, I could go from 5 mmol/l (90) to 13 mmol/l (230) in an hour and be up there for hours whatever insulin I pump in.

I'm a little overweight and pretty steady with that. Only had some weight gain with further reducing carbs, no magical weight loss here. No magical "feeling great" either. (This is compared to eating more mod carb but cutting out the worst). But I don't consider eating all that much more carbs viable for me anyway, due to the pain it gives me BG control wise.
