Just a general note about an experiment I did. I compared my blood sugars throughout the day after starting the day with 2 different breakfasts. If I eat eggs for breakfast my bg all day averages 20 pts. less than if I start my day with cheerios! Plus I feel tons better.
My fav. way to have eggs? I like to make omlettes filled with ham, cheese, and loads of tomatoes! I think this is a great low carb breakfast.

Me, too! I often eat them for dinner. Depends on my carb count for the day and what I crave.

And they are CHEAP!

A recent article in Mother Earth News (and similar articles elsewhere) have noted that tests found that eggs from hens raised on pasture — as compared to the official USDA data for factory-farm eggs — contain:

1/3 less cholesterol
1/4 less saturated fat
2/3 more vitamin A
Two times more omega-3 fatty acids
Three times more vitamin E
Seven times more beta carotene

If you like eggs, try pasteured eggs - eggs from chickens that "graze" on grass and bugs as well as high quality chicken feed. They have a much richer flavor as well as being better for you.
