I’m 5’11’’ – 180lb, 50 y.o. and I exercise regularly. I don’t have sugar in my home for the past 20 years (I drink black coffee), although I occasionally enjoy a cookie or a slice of cake. Last I checked (2 weeks ago) my glucose level was 89 after fasting and 118 one hour after lunch. My glucose level was never in the red zone. So I don’t believe I have diabetes.
But I have some swelling/burning/pain in my lower left leg (left front side) for quite some time (about 3 years and it’s getting more annoying). There are some signs that, for the sake of symmetry, something similar is developing in my lower right leg. What could that be?
My doctor recommended METANX which is used for Diabetic Neuropathy, but can anybody have Diabetic Peripheral Neuropathy (DPN) without having diabetes? Would METANX be safe (and, eventually, beneficial) to take by someone that is not a diabetic?
Yes, I have heard anecdotally of neuropathy without high blood sugars. Generally levels under 140 are considered safe, but there are always those 'lucky' few who stand out in a crowd.

to find out what you blood glucose is really doing you need to measure it often. not just "once in a while".
you also need to ask for an HbA1C test to tell you what your "blood glucose" is averaging over time.
you should also measure your blood glucose 2/3 hours after a high carb meal (such as pasta, sandwiches, rice, fruit etc).
you say you don't have sugar in your home? i don't believe you.
do you have any of the following? bread, rice, pasta, fruit, fruit juice, milk, potatoes, pumpkin, candy, raisins, soft drinks, beans, peas...(etc etc etc)??? if you do, you have lots of SUGAR in your house. just add saliva and you have yourself pure glucose man.
as for coffee, black is the best way to have it if you want to avoid glucose. coffee has no adverse affect on your blood glucose...

It might not on yours, but it does on mine (and others). The reason? Caffeine signals the brain to release adrenalin (part of the druggy effect that has so many hooked to it), which releases a shot of internal sugar from the liver. Same as eating sugar.
For some, it might be noticeable, even an issue. I have to bolus for caffeine. For others, I guess especially with some insulin ability left (like many t2s), it may not register.
In context of the poster, it's probably down on the list. But it's good to know these things, I think.

Do you by any chance have a redness that is going up your leg as well? This could be very important.
