I was dx'd almost a year ago in Sept.I found this board shortly after that,and it has been a true blessing.With all the information shared and hard work on my part numbers are good.Well,while shopping at Wal-mart last night I saw some Almond flour.Thinking of all the posts about it I bought 2 bags.
Well this morning I made pancakes and had some sf mrs. butterworths and real butter......sniff sniff... tiny tears of joy! OMG just awesome.At the price of the flour not a weekly thing but glad to have found it,and at walmart no less.I posted this on the recipe thread too,but had to share

First of all welcome to the forum and hope you stay! And every single little tear of joy is a blessing for sure! And I'm going to walmart,lol!

How did it affect your numbers later? I LOVE pancakes and have missed them terribly. lol

Numbers were awesome for me! had 4 pancakes (the whole batch) Reading before meal was 102...2hrs after 106...and just to check for a possible slow rise...3hrs was 97.So for me it was great.Got a muffin recipe,and will be making them very soon!

Almond flour tip....store in the freezer to retain the freshness. Since it is made of nuts that are high in natural oils it can go rancid on the shelf, especially if you don't use it often. I store all nut based flours this way.

Yeah, I store my almond flour in the freezer, along with my ground flax seed.
When I make "pancakes" I use mostly flax seed meal but I add enough almond flour to flavour it. I mix the flax seed, the almond flour, and some splenda together while still dry. Sometimes I'll use a bit of baking powder, sometimes not.
I eat mine with butter, no sugar free syrup, as the pancake is already sweetened.
