Just bought a box of dreamfields spaghetti. On the front of box it says 5 grams of carbs per serving but when yo read the label it says 41g carbs 10 grams of fiber 1 gram of sugar.. now here is the twist total carbs 41 fiber -5 protected carbs - 31 ? digestable carbs 5 . so my question is what in the heck is a protected carb.

From Dreamfields website FAQ (link (http://www.dreamfieldsfoods.com/pasta-nutrition.html#sec1q2)):

Q. Why do you say that Dreamfields Pasta only has 5 grams of digestible carbs when the nutrition label states that it has 41 grams of carbohydrates?
A. While the total number of carbohydrates is the same as traditional pasta, our patent-pending formula and unique manufacturing process protects all but 5 grams of carbohydrates from being digested. The Dreamfields fiber and protein blend creates a protective barrier to reduce starch digestion in the small intestine. The unabsorbed, or protected carbohydrates then pass to the colon where they are fermented, providing the same health benefits as fiber.

... and thier definition (link (http://www.dreamfieldsfoods.com/diet-information.html#term0015)):

Protected Carbohydrates: Carbohydrates that normally would be digested but are not digested due to a physical limitation. The added fiber and protein blend in Dreamfields creates a protective barrier to reduce the starch digestion in the small intestine. When the unabsorbed or protected starch reaches the colon and is fermented it provides many of the same benefits as fiber.

Sounds nuts but so far it is okay for me ... but I don't pig out and limit to 2 oz (56 g, weighed dry) at a time. And I discovered last weekend, I CAN eat 2 oz of regular pasta, anyhow ... still not taking chances and sticking to D'fields though.

So far it's okay with me too, but I'm not going overboard either.
