View Full Version : Salsa Verde Sour Cream Chicken Tacos.

Aside from having the longest name in the history of recipes, this is an awesome meal. I came up with this the other night. I know there are many other recipes out there that are similar but I just wanted to share my version.

4 Boneless Skinless Chicken breasts (diced up and pan cooked in smart balance omega butter)
1 can of chicken broth
1/2 meduim onion (thin crescent slices)

Cook all of the above ingredients together. Adding the onions and broth after the chicken has thoroughly cooked. Simmer this way for about 10-15 minutes.

Add your favorite brand of Salsa Verde to the chicken mixture. I don't have an amount to add because Salsa Verde can be pretty spicy and it's really a preference on hotness. For the sake of giving an amount though, I usually had half a medium size jar.

Cook with the chicken mixture for another 10 minutes on low-med heat.

Add 8 oz of sour cream to the mixture. Mix well, but don't leave the heat on for long or the sour cream could curdle.

Enjoy it alone or with 2 Mission brand extra thin corn tortillas (16 carbs for the tortillas)

If you want 'em you got 'em! Sliced jalapenos could do the trick also!

I forgot to mention I also garnished these with 2 semi thin slices of avocado!

Full Fat OF COURSE! That's the one thing about eating low carb that I enjoy. LOL!

Just means I have to work extra hard at the gym, but it's worth it!

Mmmmmmmm, Allison this sounds great! I'm going to make it tonight (I've got some portobellos that need to be used so I'm going to toss them in the mix). Thank you for sharing this!

CORRECTION ON THE CHICKEN BROTH: 1/2 CUP of chicken broth!! Not the whole CAN! :P

Also toss the uncooked diced up chicken in chili powder and garlic powder for a real good KICK!

Great recipe again, Allison, and if you'd like to cut carbs even more, use LaTiara shells - they're very thin & crisp, and only 4g per shell.

LaTiara may not be distributed nationally -- they are local to ME though ... and so are their SALSAS!!!

So could I...with real chicken for me, of course.

These have become one of my favorite recipes. I started to make a 1/2 batch last Friday to take to work with me on Saturday, then accidentally dumped in the whole thing of Salsa Verde when it was just about done...so had to make up another 1/2 batch & mix it in with the first one. I can't say that I minded too much. (except that I had to stay up late to finish it & be up early. LOL)
