Something Chinese to do, if you are bored with plain hard boiled eggs. When I picked up my daughter in China, the hotel free breakfast had steam tables ... two were filled with these eggs. But, I have always loved them.

Hard-boil 8 - 12 eggs.

Cool, and gently crack shells all over -- roll on a cutting board or use your fingers.

Put into a saucepan and cover with water into which you add:

one or even two TBS of salt (or less if your blood pressure will not bear it, but the original idea is pretty salty!),

a stick of cinnamon
2 star anise "flowers"
peel of a tangerine or an orange (clean the pith off as much as possible)
1 TBS soy sauce
1 black tea bag or loose tea

Simmer for a couple hours, store refrigerated in the strained liquid or just dry (but covered so they do not dry out).

To eat, peel and cut into quarters lengthwise. I brought two for lunch!

I love the sound of this,but I've got another way of "pickling" eggs. I pickle beets. I buy them whole in a can and use cloves,apple cider vinegar,a bit of sugar, a it of salt, I've done this with artificial sweeteners,too. I pour half the liguid out of can ,then empty can into a jar,then add the vinegar and other ingredients,close. keep refrigerated and eat as you please. Let everyone else eat the beets,as they are very high in sugar content! When the beets are gone I use the liquid for hard boiled eggs. It makes them a beautiful purple and most of all they taste good! I know....I know.its a long round a bout way of pickling eggs,and I know theres always another way of doing it,but this is my way,lol!

Yes, my husband makes those, AND my Mom made them for YEARS, and they come out so pink and pretty! Isn't it PA Dutch?

But -- doesn't the beet juice have a fair amount of carbs (I suppose maybe not when you remove them from the bath!).

Tea eggs are not pickled though and do not have the shelf life of those -- those keep for MONTHS (personal experience ;-) ).

I have a friend who saves all the juice from pickles & hot mixes (spicy pickled veggies) and puts hard boiled eggs in it... yum!
