Something Chinese to do, if you are bored with plain hard boiled eggs. When I picked up my daughter in China, the hotel free breakfast had steam tables ... two were filled with these eggs. But, I have always loved them.
Hard-boil 8 - 12 eggs.
Cool, and gently crack shells all over -- roll on a cutting board or use your fingers.
Put into a saucepan and cover with water into which you add:
one or even two TBS of salt (or less if your blood pressure will not bear it, but the original idea is pretty salty!),
a stick of cinnamon
2 star anise "flowers"
peel of a tangerine or an orange (clean the pith off as much as possible)
1 TBS soy sauce
1 black tea bag or loose tea
Simmer for a couple hours, store refrigerated in the strained liquid or just dry (but covered so they do not dry out).
To eat, peel and cut into quarters lengthwise. I brought two for lunch!
