Found this recipe but I'm doubting the .07 carb count. What do you think?

Well .. without sitting down and doing some serious breakdown math given that the recipe takes (mainly) 1 lb of ground turkey, some onion, leek and 6oz of canned tomato sauce and makes it *8* :eek: servings the numbers are probably close, you added the optional zucchini and flour I'm guessing the numbers would change too.
IMHO its "Zero Carb" via the same method that food manufacturers are using to make "no trans fats" and so on .. adjust the portions until it hits the magic number needed to call it "zero".
Also IMHO you would have to do some serious "use the Force Luke" lightsaber action to get 8 servings from this recipe ... 2-3oz slice of *meatloaf?* without crumbling?
I put it through MasterCook, and I get 5 gms of carbs per serving, or 4 if you subtract the 1 gm of fiber per serving. And remember that a 1/8 lb serving is pretty measly!
I did include the zucchini and 1T of soy flour.

I have found that I get good results with just regular meatloaf....as long as I don't overdo the ketchup/tomato sauce.
I make my own breadcrumbs with low carb bread, use lean ground beef (metformin hates grease..esp. in my body), an egg, tbsp of worchestershire sauce, low carb bread crumbs, onions and green peppers, ketchup or tomato paste.

I make my own breadcrumbs with low carb bread, use lean ground beef (metformin hates grease..esp. in my body), an egg, tbsp of worchestershire sauce, low carb bread crumbs, onions and green peppers, ketchup or tomato paste.
Yeah, the tomato can sneak up on ya ... I'm gonna order some oat fiber next time I order from netrition and see how that works as a bread crumb replacement, never had much luck using even low carb bread made into crumbs since I like meatloaf tooooo much ;)

I posted this one just a short while ago, and we're enjoying it more than all the ones I used to make which used tomato sauce, paste or catsup. It's very moist, and especially delicious when the leftovers are sliced & browned in a skillet.
I've tried ground turkey in the past, and wasn't very pleased with the results.
Low carb Meatloaf
2 lbs. ground chuck
3 eggs
1 20-oz. can diced tomatoes with juice
1 small can diced green chiles
1/2 cup chopped onion
salt & pepper to taste
1 pkg. panko crumbs or other low carb crumbs
Combine everything but the crumbs . . . gently fold in the crumbs last.
Spoon into a large loaf pan & bake at 350° for about an hour.
Or use a microwave-safe ring mold and nuke it for 18-20 minutes (my micro is pretty high power - might take longer with a lower-power appliance)

I use panko crumbs in mine & it doesn't spike me at all. And we're like you . . . we love our meatloaf!

Dumb question, I know...but does the panko get crispy?:o I've seen it used a lot as a coating for frying, but never tried it. Is it lower carb than regular bread crumbs?

The recipe looks interesting and has some nice flavors. I especially love the idea of the leek and onion flavors in it. It is a little subjective though. What exactly is a large leek? They can be quite large. So, just keep in mind when making this or any other recipe that every 2 cups of raw vegetables are about 10 grams of carbohydrates and every 1 cup of cooked vegetables is about 10 grams of carbohydrates. Too many vegetables, whether cooked or uncooked, can be a source of carbs sneaking up on you. Not to say they aren't healthy carbs but they still are carbs and should be counted when they are over 10 grams per serving.

You just have to read the labels. Some brands are quite low carb. I use Dynasty brand and it crisps up nicely when I use it for breading, and it also works well in the meatloaf, but of course it doesn't get crisp in the meatloaf - it acts like any other breadcrumbs. I fold it in last and very gently, so it doesn't turn into a sodden mess before I get the meatloaf into the pan & cooked.
Also as regards the zero-carb meatloaf, keep in mind that the measure of vegetables in the recipe is the ENTIRE loaf, not per serving.
