I guess I am in the recipe mood today. This is a good one for those who have children at home. It is easily reheated and tastes as good day 1 thru day ?


1-2 lbs of Chicken, I prefer the dark meat. Cut into small pieces and stir fry in oil along with salt pepper red pepper. set aside. We also did this one from the rotissier chickens you can by, much easier.

In a bowl take cooked chicken, mix with a small amount of sour cream, raw onion chopped and a TBS or so of dill pickle relish, stir, should be a paste like consistancy.

In my day I would have cooked a salsa to pour but know I find a good quality salsa works fine.

Layer low carb tortilas in a casserole dish, add a layer of the chicken paste, sprinkle with salt pepper, cumin and add jack cheese a queso cheese to your liking. Pour a small amount of salsa, then start another layer. When done bake at 350 until everything is hot thru out. We cut these into squares, add shreaded lettuce, good quality tomatoe that has been cleaned. Pour taco red sauce over the top. Dinner is served.

The advantage is that your kids can reheat and serve themselves quite easily.

Will have to try that one, here's our version:

1lb ground beef
1 tin cream of mushroom soup
1 tin cream of chicken soup
1 Jar hot chilli/enchilada sauce
1 cup milk
Cheddar cheese grated
Low carb tortilla chips
5 green chillies (finely chopped - deseed for cooler version)
2 cloves garlic (crushed)
1 onion (chopped)
1/2 stick butter

Brown the ground beef in a pan, the drain off juices. Add onion, garlic and chillies, cook over medium heat for about 5 minutes until onion softens. Pour in soups and mix well, add milk and mix, add chilli sauce and mix well. Bring to simmer and allow simmer for 10 minutes. Take oven dish (large) grease the inside of the dish with butter. Crush some tortilla chips and line bottom of bowl, then add layer of meat sauce, cover meat sauce with sprinkle of cheddar cheese. Add layer of crushed tortilla chips, meat, cheese & repeat until bowl is full. Finish with layer of tortilla chips and cover with cheese. Bake in oven for 35 minutes, remove and let stand for 5-10 minutes. Serve. Makes enough for 4-6 people.

Again can be reheated. I find this works well for my BG, ymmv.
