I guess I am in the recipe mood today. This is a good one for those who have children at home. It is easily reheated and tastes as good day 1 thru day ?
1-2 lbs of Chicken, I prefer the dark meat. Cut into small pieces and stir fry in oil along with salt pepper red pepper. set aside. We also did this one from the rotissier chickens you can by, much easier.
In a bowl take cooked chicken, mix with a small amount of sour cream, raw onion chopped and a TBS or so of dill pickle relish, stir, should be a paste like consistancy.
In my day I would have cooked a salsa to pour but know I find a good quality salsa works fine.
Layer low carb tortilas in a casserole dish, add a layer of the chicken paste, sprinkle with salt pepper, cumin and add jack cheese a queso cheese to your liking. Pour a small amount of salsa, then start another layer. When done bake at 350 until everything is hot thru out. We cut these into squares, add shreaded lettuce, good quality tomatoe that has been cleaned. Pour taco red sauce over the top. Dinner is served.
The advantage is that your kids can reheat and serve themselves quite easily.
