i snack on these little crackers all of the time to break up the monotony of the raw foods i consume.
basically by dehydrating the foods like this the enzymes are not cooked out and you still benefit from all of the goodness of raw veggies with the crunch of a cracker. the dehydrator only removes the water.
ive trialled different variations of this recipe, its so quick and easy to prepare too.
2 grated carrots
2 grated courgettes/zucchinis
3 sundried tomatoes (rehydrated or stored in oil)
half cup of flaxseeds/linseeds
half cup water (filtered)
sea salt
flavourings:
quarter teaspoon turmeric
one teaspoon cumin
1 tablepspoon ground coriander
quarter teaspoon cayenne pepper
quarter teaspoon ginger
half cup of oil (olive flax or something similar)
mix all ingredients in a food processor until well mixed
spread mixture on either paraflex sheets of kitchen parchment
mixture needs to be about quarter inch thickness
mark your crackers out by scoring the mix before it goes into the dehydrator machine.
i set my excaliber machine on 105 F for around 7 hours
then flip them over onto just the mesh trays for another 7 hours.
these can be eaten just as snack crackers in their own right which is delicious or spread 'raw nut cheese' on them or some nut butter. along with your favourite raw veggies/salad.
