I tried my simple menu that will make you full half day.
1. About 75gr of soy tempeh (1 cm-diced cut, fried lightly with 1 tbs olive oil, salt, pepper, other as you like). Olive oil will be absorbed. Add vegetables (cooked or raw) such as green peppers, green onions
2. 1-2 egg, half-boiled
3. 1 glass full cream milk.
It works for me for stable BG below 100. (before meal 93-95)

I LOVE Tempeh!
It is available as a health food here in the west. I like to eat it when I crave french fried potatoes! Almost all the carbs in it are fiber.

Kathi, I think you need the right culture mix -- they do sell it online here in the US, if you look for tempeh culture or tempeh kit .... I just get it at my regular grocery, in Produce, it is always there and not too pricey ... someday when my kids are older I'd like to make it too!

For making at home quickly, you'll need dehulled soybean and starter.
You can grow the fungi for starter on agar if you want to experience. Do not worry for contamination. Tempeh culture is a very dominantly growing organism, it will supress unrequired organism's grow.
You need to roast the dehulled bean at 110C for 30min. Use pressure cooker. Cool it. Mix with starter you have made, put it over transparent plastic and wrap. Make many holes using a needle to let air through. Room temperature is required for good growth. After 24 hr approximately it will be ready. Put it refrigerator to stop growth.

Thanks for your reply. I enjoyed reading your directions. They sound a bit complex for me. I am fascinated by how other cultures cook but kind of a klutz in the kitchen so I don't know if I would ateempt to make my own. I will keep an eye out in the stores though.
I work with a lot of people from all over the world who cook interesting foods but I've never tried this one.
And it's good to hear it is so easy on the BG.

I also love tempeh. Our local co-op carries it as does our local Trader Joes. I have even seen it in flavors. I cube it and mix it with stir fry veggies.

In my garden this year I planted soybeans hoping to try all sorts of things with them. However, the rabbits had other ideas, and are now well nourished. :(
