This recipe is usually made with flour which I avoid now, but it is an old fave. I replaced the flour with flax seed meal and tried it today. The puffs came out pretty good.(recipe says you can use tuna but I haven't tried that)
Salmon Puffs
1 can (14 oz) salmon or tuna
seasoning--I used only pepper
1 egg
1/4 cup flour--I used a scant 1/4 cup flax seed meal
1 heaping teaspoon baking powder
Drain the salmon well and reserve 1/4 cup liquid in a small bowl.
Put the salmon in a mixing bowl and break up with a fork. Mash in the egg and flax seed meal with the fish and mix up well.
Add the baking powder to the reserved liquid and beat with fork until fluffy. Add to the fish mix and blend well.
Use 2 teaspoons to carefully drop small balls into deep fryer with hot oil (I used Canola). When brown on one side carefully flip and fry on the other until golden brown. Remove from deep fryer and drain well on paper towels.
These are best when first fried and hot from the fryer.
I had these with a (very) few sweet potato fries and a salad for lunch.
