View Full Version : Steeler Half Time Food

This maybe a little Carby for some, but my family has been eating this dish at half time for many many years.

Brown 2lb of hot sausage, jimmy deans, or the like, I like JamesTown myself.

When not quite fully cooked push the sausage aside and drain off the grease. I usually dap at it with a wad of napkins till I get most of it out.

Add 1 whole chopped yellow onion, 3-4 cloves garlic, 3-4 Jalopenos, 1 cubanela pepper, 1 chopped green pepper, 1 chopped red pepper.

Cook until the peppers are soft, then add 2 cans of drained Black Beans. Bring up to heat, but do not over cook. I have done this with field Peas as well, both are very good.

For those who can't take the heat, have a bowl of Advocado slices ready and some sour cream to top with.

That sounds ridiculously good -- where do the carbs come from in the dish? Black beans? I don't eat many beans...

Yea, went to the store and already purchased my traditional halftime meal. Black Beans have some carbs, just don't over cook them.

I guess this would go good with any teams half time. I used to eat it with a good tortila chip, might have to forego the chips this go around.

Black beans do me in ... I would make a recommendation of substituting black soy beans! (But actually those do me in TOO!).

From what I have been reading about RS, RS2, RS3, stay away from canned beans, Dry beans when rehydrated and cooked at a low temperature have far more RS. Navy Beans are among the highest. Haven't tried this yet, but you the weekend is right around the corner.
