Yes, I got my mashed potatoes back. The potatoes are long and green, as in green cooking bananas, not plantains, bananas.
Sunday, waited several days for the grocery store to get a new shippment of green bananas. Now wife was extremely hesitant about eating green bananas.
Steamed 4 medium size bananas, took about 15-20 minutes for them to get soft. Green bananas are rock hard when raw.
Smashed the bananas with a potatoe masher, added butter, salt, pepper, a little 2% milk (didn't have any cream) and put some cheese on the top. You are thinking now green bananas, they have to taste horrible. Wife could not tell the difference between them and real mashed potatoes, me I loved em.
Dinner was 3/4 lb of Ribeye, Brocholi, cauliflour, and a plate of green mashed bananas. Pre BG 97, 1hr PP 120, 2hr PP 105, 3 hr PP 98. Look out Turkey here comes the green bananas.
I am going to try them fried next. All kinds of potatoe recipes are floating thru my head, scalloped, fried, baked, OOHH this is good. I didn't mention that the greenys are chuck full of RS.
Hey, MCS. Good idea. Try "garlic mashed cauliflower" too. I can barely tell the difference. We roast the garlic first and use "butter buds" along with the canola oil margerine.

Tried the cauliflower, haven't aquired a taste for it yet. The greenys are as close to mashed potatoes as I will ever have I think.

What is the carb count on green bananas?! Regular bananas are one of the foods that really do a number on my BG and I can eat them only if they're in something else, like oatmeal, and I have to limit the portion. Two bites of a ripe banana to treat a low will really do the trick for me.
The green bananas are not llike ripe yellow ones. I doubt you could eat it raw, they are rock hard, snappy like a potatoe. You have to cook these to eat them. Not sure of the carb count. I can't eat ripe yellow bananas myself, just like eating pur sugar, the greenys had little impact on my BG.
According to Calorie King, Plantains (Platanos) for 1/2 c of slices (2.5 oz) are 90 calories, 22g of carb.

Read the link, not sure what to make of it, I can only say the greenys had little impact, not the impact the info in your link would suggest. Not sure if they are including the amount of RS in thier calculation of the total carbs. Green Bananas have 7 - 10 grams of RS, plus 3-5g of fiber, which would account for 10-15g of the total carbs. The carbs found in green bananas do not react like the simple carbs in say white bread.

This is accounted for by the fact that some foods are lower on the glycemic index than bread. They don't spike blood sugar and take longer to show up as blood sugar. It could be that green bananas are also lower on the GI.

That was the general idea. By the way I also read about using the Cauliflower as hash browns, makes sense doesn't it. Well you can try it. I have found out that all foods if cooked to long will eventual break down into short chain starches or glucose. The same holds true for Cauliflower cooked till brown. Might as well have eaten fried potatoes it was that bad and I would have enjoyed them more.
There is limited data on Green Bananas out there at best.
I had a pleasant suprise at lunch today. Wife getting into this thing as well, she has lost a lot of weight joining me on this low carb or ulternate carb life style. She cut up the last 2 greenys we had, dipped them in beaten egg and rolled them in Almond flour, fried em up just right, man they were good. I will let you know in about 30-40 minutes if they were BG friendly.
I completely agree with you on the hash-browned cauliflower, I think I'd prefer the real stuff too. When I am served hash browns, I just eat the crunchy part (I order them extra crunchy) and leave the white middle part.

Well the fried green bananas in almond flour, 1 hr PP I am at 130, not to bad for 2 bananas, man they were good.
