I posted awhile back about some of my concerns (i.e. "healthy" 31 yo with fasting glucose of 103/104). Well I recently did another test with a burrito (53g of carbs total). After not eating for a 5 hours I was at 100. After eating the burrito I was 165 at 1 hour, I missed the 2 hour test but at 3 hr I was at 100, 4 hrs it was down all the way to 79 (tested 2x to make sure). I this a type of reactive hypoglycemia, even though I wasn't technically hypoglycemic? How could it be lower than my fasting? Also, what kind of dietary changes (I already exercise quite alot) can help me prevent DM if possible? I have already limited my carbs to ~ 35g per meal (whole grains, fruit, veges) and it seems like Im not getting enough calories now to build any muscle. My most recent fasting lab value of 97 is better so I'm hoping something is working. Also, I have been concerned that I may be an early type 1.5, does that fact that my insulin can lower my glucose to well below fasting after a high carb meal indicate otherwise?

We need more information.
What was in the burrito?
Also, just because you're limiting carbs, don't be afraid to eat more fat and protein if you're worried about not being able to build muscle.

It was vege burrito with a white flour tortilla, black beans, and some other assorted vegetables. It's just weird that I would go higher than normal than drop down below my fasting level by over 15mg/dL. I have some sort of dysregulation going on? Just hoping I can halt or even reverse it???

I don't have a lot of experience with lower numbers, but my instinct says that maybe this was not as bad of a meal as you may have thought it was, mainly because of all the veggies you ate. Sure, it sounds high carb... but if a decent portion of those carbs were from veggies, combined with the fact that there doesn't sound like there was much protein there to slow down the absorption, so maybe this wasn't as bad as you think? I dunno... I could be wrong.
Also, lots of people here seem to be more sensitive to insulin at different times of day. Was this burrito meal lunch or dinner? I only ask because some say that their morning numbers are generally higher than mid day or evening. If that's the case for you, these numbers still make sense to me.
But hopefully others with more knowledge will come by and respond too (and be quick to correct me if I'm wrong). :)

What you are decribing, 70 bg in 4hrs is the typical response of a Pre-Diabetic.
I would go get a OGTT.

It could be a sign of impending reactive hypoglycemia, but in and of itself does not mean anything. The best thing to do is to stop experimenting and get an Oral Glucose Tolerance Test if you are truly concerned. That is the gold standard for diagnosis and will put your mind at ease.
I must admit I cringe a bit when I see so many new people experimenting like this. I know that you want answers, but it doesn't seem healthy to me. Just my two cents.

I just reread my last post on this thread... I did not mean to imply that protein and fat slowing down carb absorption is bad... I just meant that the lack of protein or fat might possibly help to explain why you would have peaked and come back down so quickly. Maybe a bit of protein and fat with this would have better results?
I do agree with the others though... maybe it is time to think about the gtt.
