Ok, I haven't tried this recipe yet as I *just* found it, but it looks really good & pretty low carb.

I plan on trying it soon, but don't have a couple of the spices at home, so I'll have to wait til shopping day. In the meantime, if anyone else tries it, let us know how it is!
Oooh looks like it couldn't go wrong!

There is a spice blend called Chaat Masala that you might also find interesting. It is a blend similar to what is called for in that recipe. It is mildly spicy and has all the flavors of Indian cuisine. This is different than Garam Masala. I made chicken with the Chaat Masala last week and cooked it on a bed of rice mixed with unsweetened coconut milk, chicken stock, garlic, cinnamon, star anise and pineapple cubes. It was delicious. All I did with the chicken was to liberally spread the Chaat Masala on both sides and place it right on top of the rice mixture with a few drops of EVOO drizzled on it to keep it moist. I baked it at 400' for about 30 minutes, until the chicken was done and the liquids were absorbed into the rice. And the family could eat what they wanted with the chicken right on top of the rice. Of course, I had to have a little of the rice, too! But, no bg spike from the coconut milk. Usual 2 hr. reading after the fact. YMMV.
If you can't find Chaat Masala in your grocery store I think you can find it online easily.
It really does look good. I eat those chicken cutlets a lot and am always looking for something new to do with them. Thanks.

PS I hope whoever tries it first reports back!
