View Full Version : So Glad I can still have Red Beans and Rice

I cooked red beans today with soy chicken strips. This is a Louisiana staple. Not sure if the rest of you eat it. I had 1/2 cup beans and 1/3 cup rice with 4 soy chicken strips. My bg before was 102, at one hour 112, two hours 116. I was concerned about all that starch but no problems at all. And I feel satisfied/full hours later.
Quick Red Beans - 4 servings
1 can red beans or kidney beans (make sure no HFCS)
1/2 can crushed tomatoes (check the sugar, this had 2. We also like the no sugar added diced tomatoes)
thin sliced celery
pepper, thyme, garlic, oregano
Simmer all a few minutes. Serve over cooked brown rice. Add cooked soy chicken strips (frozen vegie chkn not the breaded kind) on top.
Very easy.
I'm also surprised how much I like baby spinach for salad even more than romaine.
I've had very good results with frozen soy crumbles too. They are also low enough in sodium. I either mix it with peas (frozen have no sodium) and have red grapes for dessert or I use it in tacos.
Barbara's Bakery cereals and soy milk don't raise my bg either. I enjoy the Cinnamon Puffins and the Oat Squares.

Red beans & rice is one of my favorite things . . . maybe I should try it again over here! Thanks for the encouragement . . . Glad you're able to enjoy it!

We ate at a Cajun restaurant in town this past weekend, and I had a small portion of red beans and rice with my grilled amberjack. It was delicious. My 2 hr reading was a little higher than I like it to be (156), but it was a nice treat.
OHHHH, I am soooooooooooooo envious of you!
I cannot tolerate more than 1/3 cup of beans, and that would be WITHOUT RICE!
I am quite sure the insulin is simply not being produced in enough quantity, anymore. :(
But, keep in mind, insulin will continue to help your body store fat, so if you are trying to lose weight, you might want to keep the beans and rice more occasional. (bear in mind in reading this, my envy of your ability to ever eat it ;) I do not mean to be a killjoy here!).

Experience on my end reminds me that if you happen to have left overs, do not, do not over heat them before you eat them. The additional cooking will break down all that starch and make it highly available to my blood stream.

Not sure where Starks is. Is it near Vinton? I know there is one in TX near Orange.
Was it the red beans and rice that clued you in to south LA? hee hee :D

One of my saddest items I have had to give up is black beans and rice. I love them but they spike me and they are not worth it so no more beans. I may try the kidney beans though maybe they will be different.?

It was your location! :) I grew up in Beauregard parish. Starks is right before you get to Texas. 30 min from Orange. The exit is actually "Toomy/Starks".
