Snickerdoodles are Amish cookies.
This is a good one for the lunch box, where you could limit the amount provided, since it's hard not to eat snickerdoodles by the half-dozen.

Snickerdoodles

* 1 3/4 cups soy flour
* 1/2 cup almond flour
* 1/2 cup oat flour
* 1 cup soft butter
* 1 3/4 cups Splenda
* 2 eggs
* 2 tsp cream of tartar
* 1 tsp cinnamon
* 1 tsp baking soda
* 1/4 tsp salt
* 1 tsp cinnamon

Topping :

* 1/4 cup Splenda
* 1 Tbs cinnamon

Preheat oven to 350 deg F.
Sift together the flours, cream of tartar, baking soda, 1 tsp cinnamon and salt. Set aside.

With a hand held mixer or the bowl of a standing mixer, cream the butter and Splenda for 3 minutes. The color should lighten noticeably. Add the eggs one at a time and blend one minute after each is added.

Stop and scrape down the sides of the mixing bowl at any time during this process when necessary to mix thoroughly. Blend in the flour mixture in 3 parts, mixing at least 20 seconds after each addition.

For the topping: Mix together the 1/4 cup Splenda and 1 Tbs cinnamon in a small bowl. Using a fork or a wire whisk, blend well to evenly combine the two.

Roll the cookie dough into walnut size balls and drop into the topping mixture roll to coat the cookie and place at least one inch apart on cookie sheet.

Bake for 12 to 15 minutes.

Makes about 30 cookies.1.5 carbs per cookie.

Angel Bites

Prep time approx 20 min
makes approx.36 bites

Ingredients:
5 Egg Whites
1/3C.Splenda
1 1/2tsp.vanilla
Pinch of salt

Directions:
preheat oven to 350F lightly oil a 13X11 baking sheet set aside
separate egg whites In a medium bowl.whip on high speed of mixer until frothy.
add Splenda ,and salt..mix until soft peaks form about 20-30seconds
spoon slightly rounded tablespoons of egg whites onto baking sheet, bake in preheated oven 10-15 minutes or until golden brown remove from pan sandwich Angel Bites with filling of choice///Citrus filling
juice from 2 oranges approx.1/2 cup
juice from 2 lemons approx.1/4 cup
4 tsp cornstarch
3 tablespoons Splenda
1 egg yolk
Juice orange and Lemons to make approx.3/4 cup blend Splenda and egg yolk add cornstarch..cook over medium heat stirring constantly until thickened..chill until ready to use

Lynne, I made your Snickerdoodles last night!! They were pretty easy to make and came out really well. They had a wholesome taste to them...I had a time fighting off the non-diabetic roommates who were tearing into them (they were made for my diabetic boyfriend) and in the end I had to stash them away before they were devoured. :thumbsup:
