View Full Version : quick creamed spinach and cauliflower (improv)

1/2 small onion
2 cloves garlic (or more)
garam masala or cinnamon or spices of your choice (hot chili!)
1 pkg frozen cauliflower
1 pkg frozen leaf spinach (loose, not the block kind)
2 TBS cream
olive oil or butter ...

Saute onion and garlic and spices in butter until clear, stirring well, then add cauli and saute. Add spinach and stir-fry till thawed, then add cream. Lower heat, cook until cream is evaporated.

Sounds great Foxl! Have you ever tried adding a pinch of nutmeg to this recipe? I like to use nutmeg with dark greens or cream sauces. It just brings something out in the overall flavor. I love the garam masala idea!

That does sound good (provided you like cauliflower and spinach which a do). I love veggies. This sounds to be a really good low carb, meatless meal in itself. Keep on experimenting Linda--your experiments are much more successful than mine and then I can reap the benefits of the rusults ov your improvs. Thanks for sharing.

I just used what was handy -- I did not feel like grating my whole nutmeg (and I think this gm has nutmeg, actually!).

This would be a good low-carb stuffing for peppers or mushrooms (or both, and other veg, if you want a festive platter for a party!). Especially if you added some cheese on top. Yum.
