This is a recipe I developed one time because I wanted a nice side of broccoli rabe to go with my dinner, but had none around. I needed a substitute, and this spinach was it.

1/2 medium sized onion, finely chopped
One piece Canadian Bacon (optional)
Virgin Olive Oil (EV works too, but don't use the good stuff)
Fresh Spinach

Pour the olive oil in a medium sized pan, just a bit more than to just coat the bottom, and heat on a medium-high temperature. Add the onions, and let them caramelize, moving them around slightly so as to keep them from burning or crisping. Add the spinach, about a large handful's worth, moving it about the pan as it starts to wilt. As soon as the leaves are wilted and the spinach still has a nice bright green color, remove from the pan, plate, and enjoy.

For a little more flavor, add a piece of Canadian Bacon or Prosciutto di Parma with the onions.

Great recipe! I love sauteed spinach. I make mine with olive oil, lots of chopped garlic and some diced roma tomato. No real recipe, just a little of this, a little of that. Just made some last night to go with my steak. I like the Canadian bacon idea.

I sautee the onion and then add some garlic with the spinach in olive oil. I susually use a thawed package of frozen spinach but do prefer fresh. I then scoop in some sour cream and grate in some parmesan for an easy creamed spinach. a bit of nutmeg is a nice flavor as well in this.

Interesting idea. I am not too fond of anything creamed, it bothers the stomach too much for my liking. I have used garlic before though, and it gives the dish a different yet delicious taste.
